  • What IS Pumpkin...?

    would Fresh Pumpkin be considered a Regular Veggie or a Squash Type Startchy Veggie? i have read a few notes from our UK and Australian friends here on how they eat Pumpkin as a Veggie versus as a Dessert type food, and i would like to Roast some and try it this way! i just dont know how to figure it in my Menu... FITDAY does show it as 30 Calories - 0 Fat - 1 Protein and 8 Carbs PER CUP...

    though it's higher in carbs than most induction veggies, it is on the list..so it's not a 'starchy' veggie as far as atkins goes.


    it is a type of squash though..and can be eaten savoury as well as sweet. you can probably find alot of receips on the internet...

      Thank You SADIE duh....... i just looked on my OLD Induction List... i guess i just dont look there hardly ever anymore since im on Rung 3 now... and YES... i am finding alot of Savory Roasted Pumpkin recipes on the Net... MAYBE SOME OF OUR FRIENDS HERE WILL GIVE UP SOME OF THEIR FAVORITE SAVORY PUMPKIN RECIPES??? how do u roast it?

        I just LOVE FRESH pumpkin with butter. So yummy.

          I don't have a recipe but I mixed mine with heavy cream, butter, and Splenda. Tasted good to me - reminded me of sweet potatoes.

            Pumpkin is permitted on Induction and yields 18 total carbs and 7 fibers per cup. As is the case with tomatoes and squash, pumpkin is botanically classified as a fruit. Oddly enough, the USDA categorizes it as a vegetable regardless!

              Oooh...thanks for bringing the subject up! Now that the fresh veggies are turning to the seasonal squash, winter cabbage, onions, etc., pumpkin is a great supplement to veggies and provides lots of great vitamins to boot!

              Now I have to go buy more pumpkin...

                  Yum Yum... i never thought about that....... i would be missing my Candied Yams at Thanksgiving... i bet if i added a little Cinnamon with Butter & Stevia it would be sooooooooooooooooooo good!

                    Pumpkin is pumpkin. When I use the canned stuff, I follow the nutritional info on the can. For Libby's 100% pumpkin, 1/2 cup is 4 or 5 net carbs.

                    For fresh pumpkin, the USDA Nutrient Database website (http://www.nal.usda.gov/fnic/foodcomp/search/) says that 1 cup of 1 inch cubes (approximately 116 grams) of raw pumpkin has 7.54 net carbs. When I use fresh pumpkin, I follow the USDA website and measure the pumpkin raw.

                      Oh my gosh pumpkin is soooo yummy. I just saw someone mention a pumpkin thing that they make in reply to another post and I made it and was like amazed by how good it tastes. It's pumpkin, some pumpkin pie spice, and whatever type of sweetener you are partial too. Microwave it and there ya go. I am so gonna try the butter and no pie spice as well.
