I was just looking at lostandfound's card on the sticky above and noticed that rhubarb is on the list of veggies . How do you guys prepare rhubarb as a veggie?

Hmmmm... this interests me too. I've always prepared it as a dessert. That it's listed as a legal veggie is a bonus for we Atkineers!

Its listed as a vege but i have only ever seen it used as a fruit -- I stew it with some splenda and serve it with cream - So i feel like i am getting FRUIT when really its a vege! ( YUM) Are you able to grow it from seed? if so maybe you can grow some in your garden SAlly ! Somehow I dont think it would seem right to be used as a "vege"!
Whatever you do though -- DO NOT EAT THE LEAVES as they are posionous!

I doubt you'd be able to grow it in Italy - it likes cold winters and hates hot dry weather!!
I've had it with duck and it's very good. Made it like this:
Put 1 large rhubarb stalk (chopped), about 1/2 teaspoon grated fresh ginger, one tablespoon of Splenda and 2 tablepoons of water in a saucepan, and simmer until the rhubarb is just tender, stirring all the time. It'll only take about 2-3 mins. Drain off the water and serve on the crispy duck. It's kind of sweet and sour and goes very well with the duck.
I imagine that might go well with pork also, though I have not tried it.Kate

Oh my, I know what I'm serving with my turkey this year on Thanksgiving. I always try to come up with some kind of a cranberry dish and it never tastes the way I want it to. I love rhubarb!!! I chop it and simmer it in water and alittle sweetener. I use it as you would cranberry sauce.
I use it raw in "slaw"--slice it into matchsticks and mix it with a mild-tasting veg like jicama and/or celery, mayonnaise and a little onion.~Megs~

Is it on the Induction legal list of veggies?

Did Atkins on and off from Feb 2005 until April 2008. Fluctuated between 15 st 1/211lbs and 11 st 1/155lbs.
On different weightloss programme from 28th May 2008 start weight 14 st 11/207lbs.
Current weight 10st 3lbs/143lbs.
Ultimate Goal Weight 9 st/126lbs.
