    I was just looking at lostandfound's card on the sticky above and noticed that rhubarb is on the list of veggies . How do you guys prepare rhubarb as a veggie?

    Hmmmm... this interests me too. I've always prepared it as a dessert. That it's listed as a legal veggie is a bonus for we Atkineers! 'Cept that I can't get rhubarb here in Italy...

        Its listed as a vege but i have only ever seen it used as a fruit -- I stew it with some splenda and serve it with cream - So i feel like i am getting FRUIT when really its a vege! ( YUM) Are you able to grow it from seed? if so maybe you can grow some in your garden SAlly ! Somehow I dont think it would seem right to be used as a "vege"!

        Whatever you do though -- DO NOT EAT THE LEAVES as they are posionous!

          I doubt you'd be able to grow it in Italy - it likes cold winters and hates hot dry weather!!

          I've had it with duck and it's very good. Made it like this:

          Put 1 large rhubarb stalk (chopped), about 1/2 teaspoon grated fresh ginger, one tablespoon of Splenda and 2 tablepoons of water in a saucepan, and simmer until the rhubarb is just tender, stirring all the time. It'll only take about 2-3 mins. Drain off the water and serve on the crispy duck. It's kind of sweet and sour and goes very well with the duck.

          I imagine that might go well with pork also, though I have not tried it.

            Oh my, I know what I'm serving with my turkey this year on Thanksgiving. I always try to come up with some kind of a cranberry dish and it never tastes the way I want it to. I love rhubarb!!! I never thought about putting a little cream with it. My mouth is watering just thinking about it.

              Tks for the suggestion. Actually, I did try once, a few years ago... it didn't die, but it didn't thrive either. Never grew big enough for a crop. Then we sold the house...

                I chop it and simmer it in water and alittle sweetener. I use it as you would cranberry sauce.

                I use it raw in "slaw"--slice it into matchsticks and mix it with a mild-tasting veg like jicama and/or celery, mayonnaise and a little onion.

                  It likes to be ignored it seems. Ours was here when we bought the house over 6 years ago. We have done NOTHING for it,,,,only taken and it's one of the few things "our" groundhog won't eat

                    Is it on the Induction legal list of veggies?

                    Did Atkins on and off from Feb 2005 until April 2008. Fluctuated between 15 st 1/211lbs and 11 st 1/155lbs.
                    On different weightloss programme from 28th May 2008 start weight 14 st 11/207lbs.
                    Current weight 10st 3lbs/143lbs.
                    Ultimate Goal Weight 9 st/126lbs.

                        I didn't realize until I was telling my mother about using it at Thanksgiving that we can't find it this time of year. Do you know if they sell it in stores in the fall/winter?

                          It's a spring/summer harvest, so unless your store imports some, you will probably only find in frozen or (yuck) canned.
