    Wow! Thanks everyone for all the great ideas, they all have been really helpful. I also have been bringing cream cheese and spanish olives w/ pimento on low carb bread or on low carb crackers. Another is greek yogurt mixed with cucumbers and mint. Keep them ideas coming

      I do it all the time. With oil and vinegar dressings, it doesn't matter if it separates, just shake it up to re-emulsify it---especially if you make your own dressing. If it's a creamy type dressing, all you do is stir it to re-mix.

          ahhh--- gotcha--- with our blue cheese stirring didn't work so I assumed it wouldn't work with others

              More lunch ideas I came up with:
              I also started bringing ham & provolone roll ups (I lay ham down then add two pieces of provolone & just roll em up). I bought a cooler that has a built in ice pack but doesn't last too long so I have added another ice pack. I also pre cook some shrimp the night before and add them to a guacomole dip I make from scratch with avocado, tomatoe, onion & cilantro. Really good! Plus I've been bringing tuna salad out of the bag so there is no messy draining. I also been using those new spritz bottles for salad dressing so no leaks. Thought I'd share...

                Thanks for the food ideas, cherri.

                I tried making "cheese chips" this week, and I think I'll be baking up quite a few of those little beauties to take with me as a snack this next term...something different to have with lunch. Shredded cheese with a dash of garlic powder, pinch of the mix on parchment paper and bake/broil....watch them cook, and when the oils bubble and almost "gone" and everything looks hardened but not burnt, they're done. I think the trick is to make sure you watch them. Mine had nice "holes" in them and those were more crunchy than the ones with less holes. I also made a "cheese taco" shell and that was good with meat leftovers.

                  LOW CARB CRACKER--They are called Smackaroos, and sometimes are hard to find. They are very tasty though!! You can order 'em online if all else fails- I think I might have to myself as it's been a couple months since I've been able to find any :-(
