  • Fresh Roasted Pumpkin! Mmmmmm

    just wanted to post this AND let the Newbies know that this is Deeeeeelicious! and its ok on Induction right? its one of those on the "other veggies" list... and if you Like Pumpkin... Buy 1 and Try It...! i bought a Fresh Pumkin and roasted it in the oven... Mmmmmm mmmmmm mmmmmmmmm... it was So Good!

    I just love roasted pumpkin. I like it well done so it gets a little black around the edges which caramelises it a bit. mmmmmmm

        I wonder if the pumpkin I tried cooked this way had something wrong with it? I tried this with one year before last and it was bitter. I never tried pumpkin, because the only way I had ever tried it was as pumpkin pie and I didn't like it at all. I bought a small one billed as a pie pumpkin and I cut it in cubes, brushed it with melted butter and roased it until it was pretty dark and crisp around the edges--looked delicious--but tasted bitter and nasty. I gave the rest to the squirrels. I don't want to waste the money on another one, but it seems that a lot of people like it roasted. Hmmm what to do?

          I tried pumpkin when I first started OWL and had cravings right away. I am hoping to be able to add it down the line!

            THats a bit sad because our pumpkins have a lovely sweet flavour. My favourite is Butternut pumpkin - I think you call it butternut squash in the USA.. .... I could always fly over and roast some for you ( i need a holiday)

              Hi Donna! I think that butternut and pumpkin are different but of course, both members of the squash family. Butternut is delish, pumpkin great too but they vary in sweetness from country to country. In Japan pumpkins are super-sweet! In SAfrica, not sweet at all (imo) but butternut is awesome there. Haven't tried butternut in the US yet but tried yams for the first time the other day and loved them - unfortunately!

              Sunny, I think you just tried a sad pumpkin - I've roasted some here that have been really sweet and yummy! Roast until they are caramelised like Donna says.

                Remember that many of the squashes (butternut and acorn for example) are not induction-legal as they are 'winter squashes' not 'summer squashes'.
                Wondering how to get 'most' of your net carbs from your induction veggies?

                  Aaahhhh..that might be it! We cannot have butternut squash on induction, because it's a winter squash, therefore starchy and carby. I like butternut squash. It's not a pumpkin at all.

                  Here's the breakdown for the carbs:
                  Pumpkin .5 cup (1/2 cup): 6 carbs, 1.3 fiber, 4.7 net carbs
                  Butternut .5 cup (1/2 cup): 12 carbs, 2.6 fiber, 9.2 net carbs

                  Pumpkin is what we make Jack-o-lanterns out of for Halloween. That's the vegetable allowed on induction. We do have some differently shaped or colored ones, but they are still pumpkins and not winter squash.

                    Sunny, I've had the same luck with the small pumpkins they label "pie" . I think they are deco pumpkins! YUCK! The medium sized, 10-15 pounders are much better, but you better be ready to freeze or canthe thing 'cause that's alot of pumpkin! Maybe they use those small ones for pie cause the sugar and spices salvage it!





                    290 lbs. on 11/02/07 Goal: 145 lbs. or size 14 whichever comes first!

                      That might be the problem. I bought a really small one, because I had never tried it as a veggie. No one in my family likes pumpkin pie, so we never had it any other way. I have a problem with the squirrels eating my carved hallowween pumpkins, so I only cut a small amount out of one side to try it. Since I didn't like it, I gave the rest to the squirrels and even they wouldn't eat it!

                      Here's a pic of the little buggers totally ignorning the pumpkin. You can see how small it was.

                        Yep, that's the size of the ones I got....they were 50 cents a piece and not worth a dime.
                        I think it's really cute that your squirrels will stand still and pose for you!!

                          If you can find the type of pumpkin known as "Calabaza" in the latin markets, it is way more tasty (and sweet) than the traditional pumpkin. It has a carb count similar (maybe lower) than traditional pumpkin as well. A green one, not quite ripe looks like this. When ripe, they will stay mottled looking but be a beige/buff color.

                          An extremely good source of vitamin A (5460 IU), a cup of calabaza contains the following nutrients:


                          35 calories

                          8 grams carbohydrate

                          They don't list fiber here, but Fitday and the USDA database give it the same counts as traditional pumpkin.

                              That's the type of pumpkin in the Libby's canned. I got some on my finger when I was making pumpkin bars, and it tasted pretty good. I am now kicking myself for not buying a good locally grown pumpkin before they closed down the Saturday before Thanksgiving. We are having this conversation a few weeks late. Silly me did take lots of pictures of the lovely pumpkins and gourds for a photo project I am doing. Now that I see what they look like, I will go back through the pictures to see if any were there.
