  • Is this really legal?

    I'm sitting here muching on 4 ounces of jicama, and I gotta ask....is this really legal? It's sweeter than some apples!
    while we're here....is there an easy way to peel these? My peeler kept getting tangled in the fibers of the peel.
    Oh, and finally, how come Jicama has absolutely no fiber when cooked?

    BTW, these are supposedly technically a legume, but they are OK from day one?
    I've also read that they are grown for their starch?

    I'm soooooo confused!!!!!

      I don't know the answer to most of your questions, except that it is legal and it is sweet. You know the little "stem" or "Butt" of the jicama? Peel it from there. I normally cut it into quarters and then peel it from the top with a knife. Peelers don't work very well with jicamas.
      They are sooo yummy to me

        I just have this eery feeling while eating them that in any moment, my hips will suddenly explode!! i have seen these often, but this is the first time i tried one. YUM

          You're hips won't feel a thing. The beauty of jicamas is that they're high in fiber. I love them

            I love them. But I can not stop eating once I have them. They caused me to want to just gorge on everything. I haven't had them in months. Sad part is the hubby ask about them all the time. Guess I should stop denying him and maybe give them another try.

                I LOVE LOVE LOVE jicama! I just went to the produce market and bought 5 lbs of it!! I just peel it with a knife. I gave up trying to cook it because it is so much better PLAIN! I love it in a salad with walnuts. There is something about that combination that tastes so yummy....almost like waldorf salad I guess.

                There are these flavored olive oils that I get at a grocery store called The Fresh Market. They are called International Collection and they come in "blood orange", "lime" and "lemon" flavors. If you can get your hands on those, they are INCREDIBLE on the jicama with some sea salt. Oh yum!!

                  Are cooked jicamas good?
                  They sound icky to me...I can't imagine someone cooking a jicama
                  I think the best way to eat them is with lime and a little bit of salt. Yum!

                  How do you cook them anyway?

                    The trouble with cooking jicama is that it never really softens. If you want a cooked veggie that tastes like an apple and has the texture of one, try chayote squash. It really does soften up and have the texture of cooked apples. Someday I'm going to expirement with them and make a fake apple cobbler or something.

                      I keep seeing people post that they have a lot of fiber, but the sticker taken right off the bulb states: Serv size: 3/4 cup (85g), Calories: 35, fat: 0g, TOTAL carb: 7g, FIBER: less than 1g. Less than 1 gram of fiber for 3/4 of a cup is not much fiber.

                      As for peeling them, I just make a small cut and pull the peeling off. I was having trouble peeling with a paring knife, and noticed that the rind would peel off just like an orange.

                        According to Fitday 1 cup of raw jicama has 11.47 carbs and 6.37 dietary fiber. That's high in fiber Otherwise, it just wouldn't make sense to have it as induction friendly veggie
                        Does anyone know what the carb counter in the book says?

                            The book says that 1/2 cup has 5.7 total carbs and 2.5 "digestable carbs". The Atkins online carb counter says it has 3.2 grams fiber for 1/2 cup.

                              Well, Hoping's and Sunny's numbers seems to add up.

                              So I was reading up on these little treasures. Seems the starch is Inulin.....it's a fiber until it's cooked, or the jicama is old, and it converts to starch. And the sweentness, I can't even spell...fructoogliosides? Something like that.....
                              I think that's the same thing I read about jerusalem artichokes....the inulin/starch conversion...except they don't have the sweetness.
