  • Special Dinner Menu...Help?

    Hi there

    As some of you from the Atkinites thread may know, my bf is coming home tomorrow. After being away at work for 6 weeks. Needless to say I'm going to be down 14 lbs (that I know of) for when he arrives. Which is exciting.
    However to kick off our atkins lifestyle together, I wanted to make him something really rich and delicious for dinner. Something so good he wouldn't even think he's on a 'diet'.


    So any ideas??? thanks in advance,

    Awww...You must be SO excited!!! Here's a dish my hubby LOVES...I love it too

    Here's what you need:

    Spaghetti squash (med-large)
    pre cooked prawns (about 20)
    garlic (3-4 med cloves)
    lemon juice (4 tblsp)
    olive oil (4 tblsp)
    red pepper (diced 1/2 cup)
    parmesan cheese

    Bake the sp.squash at 375 for 1 hr -1:15 min..
    In a pan, heat olive oil, then add garlic. Stir around for a bit then add prawns,stir around for a few mins, then add lemon juice (keep temp. at med. low) About 8 mins later give one prawn a bite to see if it absorbed the flavour.. If so, add red peppers at the end so they don't go too limp. Put aside and wait for squash.

    Squash is ready, now you cut it in half lengthwise, take out all the seeds and guck. Then with a spoon or fork scrape out the "spaghetti" and add to the prawn mixture. At low heat stir the spaghetti to get the flavour. *Add as much spaghetti to the prawn however you like*

    Now, what I also liked to do was pan fry some chicken breast, just with a little seasoning. And also make a side salad. Oh and don't forget to add the parmesan to the "pasta" when ready to serve....Trust me you both will LOVE this dish, it's very tasty!!!!

      I would go for cream mushroom soup (using sour cream) followed by a good size steak w some sautéed veggies (and may be couple of asparagus) in the same plate as the main course. And for desert, an induction friendly cheesecake may be..

        OK ...YUM!!!

        I wish I would have known about this recipe about a week ago when I cooked up a squash. Thanks for this, I'm totally digging this idea.

            Hmmm a nice 6 course meal?

            shrimp w horseradish sauce
            cream of cauliflower soup (I like cauliflower/leek combo)
            spinach salad with hot bacon dressing
            lobster tails with garlic butter (or filet mignon w/same)
            garlic "bread"sticks
            cheesecake





            290 lbs. on 11/02/07 Goal: 145 lbs. or size 14 whichever comes first!

              OK thank you soo much for the induction friendly cheesecake and this site alone... I'm in heaven over here. I'll keep you posted on what I do end up making! (PS he has requested my stuffed mushrooms so I'll make those for him one of these days.)

                  Tomatoes are part of the "one cup a day" allowance for induction, though personally I don't think it should be (it's a fruit, not a vegetable).

                    Hors d'oevres:

                    gorgonzola wrapped in proscuito
                    ----mash the gorgonzola with a few tablespoons of cream until creamy. place on slices of proscuito and roll up. secure with toothpicks.

                    First course:
                    Seared scallops or shrimp in parsley butter
                    or
                    Soup
                    or
                    Salad---tossed green salad using a mixture of salad greens

                    Main course:
                    Steak---any cut of your choice
                    or
                    Fish----pan seared salmon with brown butter, tuna steaks with tomato and cucumber salsa
                    or
                    Chicken---roasted served with natural juices

                    Vegetable accompaniment:
                    Sauteed green beans with garlic and olive oil
                    Asparagus with hollandaise
                    Steamed broccoli
                    etc.

                    Dessert:
                    I don't have any recommendations because after a meal like this, you won't have room for dessert.
