  • In need of what to do with chicken

    Hi all,

    I am on induction, I have about 7 lbs of chicken breasts thawed out in my fridge, long story lol...

    I was wondering if anyone has a hold all to do with bulk chicken breasts in a crockpot.

    I don't really want to refreeze them, don't think i can, but want to get them cooked and then perhaps refreeze them for quick take out amount for dinner and cook it up with a dish. You know like prepping. I have to cook them by tomorrow i believe since they began thawing from major frozen Sunday night.

    Or if anyone has quick and easy casseroles like okay throw all this stuff in a dish and slap it in the oven quick and easy.

    Put a few of them into a deep pot. Fill with enough water to just cover the chicken. If you want you can add a clove of sliced garlic or a sliced onion or a sliced celery stalk. Bring the mixture to a boil. Then cover the pan and lower the heat to simmer. Let it simmer until the meat is cooked. Let the chicken cool in the cooking liquid. Then remove the chicken and refrigerate it. Don't throw away the cooking liquid, because that is chicken broth you can use.

    You can use the cooked chicken in a variety of ways:
    Chicken salad, chicken soup (using the broth you made), chop the chicken for omelette fillings, slice the chicken and add to a stir fry at the last minute and cook long enough to heat the chicken through, etc.

      Okay this is going to sound stupid but how long does it take or the chicen to cook after the water boils?

        The easiest thing for me is to put it in a crock pot. Man...I LOVE my crockpot. I cook chicken about 7 hours and it is so soft when it's done. Then there is a really condensed broth. You can freeze the broth AND the chicken once it's cooked.

          i usually rub my chicken down with lemon pepper and then bake it for 45 minutes.

          Also I like to rub it down with galic salt and sage. You could also make chicken vegetable soup

            I too was going to recommend what megs mentioned. I love to keep poached chicken breasts in the fridge, they can come in so handy.

            I make variations on chicken salad by dicing the chicken, adding mayo, onions, chopped celery and salt and pepper. then i make different 'flavours' by adding curry, or cajun spice or chipotle pepper sauce.

                I'll put some onion or celery and whatever spices, but that's it. The broth that it makes will be VERY VERY condensed. But, you can add water afterwards to get it to the consistency you want.

                Unfortunately, IMO, much of the meat we pay top dollar for is very water heavy instead of meat heavy.

                  Okay great thanks, i am new to the crockpot so never sure how to do it. I will be cooking these up tonight.

                  I appreciate all of the postings and advice, i don't cook lol so trying to figure this out is kind of overwelming.
