My understanding of them is that "frankenfoods" are highly processed "convenience" foods (including Atkins bars and shakes ) that are filled with chemicals and low on nutrition. Probably anything that is the opposite of organic, natural, whole grain, preservative free would qualify.
That is ANOTHER great thing about this WOE, it forces this junk out of your diet that basically no one needs to be healthy.
When you get to the end of your rope tie a knot in it and hang on!

Outside of the ADBB, frankenfoods refers to foods created with genetically modified or bio-engineered organisms.

I always think of pepperoni, hotdogs, and certain sausages as frankenfoods too.
I don't know if sf jello would qualify (although they're filled with perservatives), but it's a good idea to limit them as they can cause cravings for real sweets and sugar in a lot of people.
For me, anything that is not a natural food is a frankenfood. But, particularly, any low carb candies, cookies, bars, shakes, condiments, etc. Anything that is junk food. Low carb junk food is still junk food.
IMO we are better off eating fresh meats and vegetables with minimal, preferably NO, processing.
