I find that reading ingredients AND the label is important. If i see too many illegal ingredients (flour, starch sugar) on a product that lists very low carbs I'm suspicous of it. I try to use my judgement rather than going completely by what the manufacturer says.
From what I know we have very good labelling laws in Canada, but i have seen imported products where I really don't trust the nutritional data if it seems too good to be true as compared to the ingredients list. This is one really good reason to try to buy mostly whole foods (though this can be hard).
