I am in cooking mood to-day, so we're having an especially yummy dinner. Turkey with pesto, pine nuts and parma ham, with creamed leeks and broccoli.

      Made like this:

Turkey breast steaks, flattened, spread with pesto, sprinkled with toasted pine nuts, rolled up. Then 2 slices of parma ham rolled around the outside of the turkey, so that they completey cover it. Roast in the oven for 30 mins. Slice the rolls to serve. This looks fab and tastes better.

Leeks are creamed by the addition of a small amount of cream cheese.

Nothing overly exciting for me. Either grilled chicken salad, or a sausage scramble.

                    Re: What's for Dinner tonight?

I had a pork chop smothered with mushrooms in a cream sauce. My DH is not well so I purééd his share and made soup with it which he managed to get down.

                        Re: What's for Dinner tonight?

Well..... last night it was cabbage & brat wurst, one of our favorites.

Tonight is the 2nd job night so I'm thinking the thawed out chicken breast that are SCREAMING to be cooked. Most likely I'll saute them & make a tomato sauce to put over them. I'm also thinking steamed fresh broccoli florettes.

Tomorrow it's going to be taco salads.

Lump crab meat melts with asparagus over roma tomatoes!

Easy to fix, and since it is snowing in Dallas right now, I don't feel like putting on my parka to light the BBQ! LOL

Boy, reading this I was just thinking, this sure beats what all those poor people doing low calorie/low fat diets are having tonight! Does this rock or what???
