  • Coconut milk

    I'm on induction so I'm pretty sure I won't get the answer I want here, but there goes. I prefer coconut milk in my coffee, rather than cream. I assume coconut milk is on the nut rung, but...

    1. It has 1 g carb per half cup.
    2. It is high in fat.
    3. Coconut OIL is allowed in induction.

    So... is there any logical and/or scientific reason not to have it, apart from the fact that it's not in the book?

    PS I know there is debate about caffeine and it's discouraged, but it decreases my appetite rather than causing cravings so I figured I wouldn't worry too much about it.

    Coconut milk (liquid expressed from freshly grated coconut meat with water added) has 4 net carbs per half cup and is about 10% carbs.

    The oil is virtually all fat, hence would be allowed on induction

    I assume it something to do with the way it is produced - as coconut milk is coconut meat with the fibre taken away.

    Ao I would agree with you that any coconut apart from the oil would not be 'legal' till you reach the nuts/seeds rung of OWL - maybe a good reason not to stay on induction for a long time

      I can only assume the carb count varies with the brand; the one I have now has 1 carb listed per half cup. The Nutrition Data website says 3 per half cup. (www.nutritiondata.com, an amazing resource).

      We have a "shack" in Costa Rica (10 x 15 feet, used to be a storage shed! But it's on a nice property). When we're down there I make my own. The grocery store has an ingenious machine out front; the guy cuts the coconut in half with a machete & hold it up to something that looks like a giant drill bit that scours it. I take the fresh ground coconut home in a bagt, put it in the blender with enough water to cover, whizz & strain, and voila, beautiful coconut milk. How I miss it!

      When we finally move down there there will definitely be some challenges for staying with this lifestyle. Not so much in terms of temptations, but in terms of availability of things we take for granted. But I'll figure out a way!

        Just had to say how green with envy I am that u get fresh coconut milk.

        I asked about coconut too yesterday, I also have the same question as you, what's the difference really? my coconut milk also says the same thing as yours. I dont use the coconut milk because Im going t wait until the nut rung to have it, BUT i still wonder. I sure do miss it. Also, fit day does not always have an accurate measurement of things, it does not give net carbs. For example 1/4 cup of flax meal is like 2g of carbs, but fit day says 6, so that's a BIG difference.

        I say, don't stay on induction too long! one of my main reasons for moving out of it is so I can have nuts, oh and yogurt

          Actually, I guess anyone could make their own - you can buy coconuts in lots of grocery stores. But it's a lot of work to get the meat out, whereas down there someone else does it for you, which is nice. Homemade, to my surprise, tastes exactly like a good quality canned coconut milk (which I always buy in Asian stores, by the way, 89 cents a can versus over $3 for Thai Kitchen brand at Safeway!

            I would think after the move staying on a whole foods atkins diet will be easier! The problem is the processed foods (which I think should be avoided anyway) but as far as fish, meat and veggies you'll be in my heaven. You can't get much fresher than buying fish from a fish guy just coming outta his boat.

              Quotidianlight - Oh, yes you can! My husband is a fisherman! (We own a fishing lodge in Canada) Last time we were down we had tons of fresh fish. One of my absolute faves was fresh ceviche - basically cubed fish soaked in fresh lime juice and a seasoning or two. The lime juice "cooks" the fish (acid). Awesome. I caught a large barracude and we gorged on that, cooked various ways, for days.

              Meat, not so much. They almost never eat beef and even pork is not so easy to find in our village (which is remote. The chicken is very good - they are small but tasty. The eggs are awesome - very dark yellow yolks and soooo much flavour compared to here. Actually, I guess it won't be so hard. There isn't a wide variety of veggies but what you get is very very fresh and good (sometimes there will be only five or six things in the store). The fruit of course is amazing, and after looking some of it up on nutrition data it's not all super bad for carbs. Although my favourite by a mile, soursop, is superhigh. And by the time we move down there I'll be eating more carbs anyway. So, lots of eggs, lots of fish, lots of salad, a little fruit, fresh coconut, chicken now & then - could be worse!
