  • Salads??!

    I haven't really been eating many "salads" for a while. Just got sick of them. I'd eat veggies just not in salads. Anyway a couple of weeks ago I got a craving for a nice salad so I went and got all the stuff, mixed greans, cucumbers, bell peppers, mushrooms, caulifower, also about 4 olives were added in. And a sliced hard boiled egg. I also have some salad dressing that has no sugar in it (off brand but really good), 2g carbs. The first time I had this salad (3 cups total), The next morning I was up a pound and a half. The next day, I made sure I was extra careful with what I ate. About 4 days later I had another salad. Next day up 1/2 pound. What is going on? I did use quite a bit of salad dressing (maybe a quater of a cup) since it was basically the only fat except for a few olives and the egg. I want to use up my lettuce and stuff today but I'm afraid to now.
    When I was on induction I had a salad with this same salad dressing every day and I was losing. I guess it's not going to hurt my feelings if I can never have another salad but I'm just confused. I still have quite a bit weight to lose and I don't feel like stalling out because of stupid salads!
    Anyone have any ideas on what's going on?
    My doctor told me to stop having intimate dinners for four. Unless there are three other people.

    You need to eat an excess of 1500 calories in order to gain a pound of fat. So, unless you did that, your weight gain is probably water retention.

      I am wondering about the salt content of that dressing too 1/4 of a cup could have a lot of sodium and if your body is retaining fluid that could be your answer ........ try eating your salad with just 2 TBSP of the dressing and see if it changes anything for you ...... WHat I do because I like a lot of dressing is I take my two tablespoons and add a tablespoon of water and thin it out ... it spreads over the salad better and I feel like I am getting more then I really am

        You could be retainng water and also fiber may play into it if you don't normally get that much?

        I love salads now that so much can be added to them! I also do as Heidi said, I only use about 2 tbsp of dressing per big salad. I find that I love it way more when I dip my fork into the dressing and spread it. I also have ham, turkey, cheese, egg etc in my salads so I guess I don't miss the dressing too much! LOL

          Ok, Thanks guys. I'm not near the dressing right now to find out how much salt it has. But I guess I'll go back to no salads. At least for a while. Not gonna miss them

            AS long as you eat 2 cups of the vegetables on the salad list then there should be no problems I would think.

            I often cook things like radish, mushrooms, celery, peppers etc instead of having them as a 'salad'. Sauteed or braised in butter or oil adds enough fat to them without adding 'suspect' things like dressings. (I call them suspect as with the serving size info often being for one tablespoon you have no idea if the 'zero' count some of them have is nearer 0.49!)

            I often wish Dr Atkins hadnt called the 2-3 cup induction vegetable list the 'salad veg list' as it makes so many people assume they have to eat a salad and not everyone likes their veggies raw!

                I agree with Elizellen. Besides all the veggies on the salad list can be cooked---including the lettuces! There is a classic French recipe for a cream of lettuce soup called soupe de laitue. Not to mention items like seared romaine hearts or braised romaine are on some very upscale restaurant menues!

                  Thanks. That is what I normally do. I do eat allot of veggies but I do prefer them cooked so instead of worrying about salads I'm just going to keep doing what I'd been doing. I love stirfry with mushrooms, celery, onions, and pepper, and chicken cubes. Have that a couple times a weeks

                    I love creamy salad dressings, but for a while now I've basically been replacing the dressing with crumbled feta or blue cheese - lots of different veggies, chopped herbs, the cheese crumbled small, a little olive oil & a squeeze of fresh lemon juice is really good. (and toasted unsalted pine nuts, or pumpkin or sunflower seeds if you're at the nut rung)

                      My grandmother used to make a "creamed" vegetable dish and she used lettuce to make the gravy. I wish I knew how it was made. It was awesome!

                        That sounds interesting Chicklady!

                        I use the tough outer leaves of romaine or iceberg in a lettuce stirfry--saute one chopped garlic clove with oil, then add the roughly chopped lettuce leaves. Cook until the lettuce is just warmed through. The lettuce is cooked but still has a crunch to it and the brief cooking brings out the sweetness of the veg.

                        I also thinly slice lettuce and put it in a brothy Asian style soup, like hot and sour.

                          Lettuce is one thing that I've never cooked but you guys have inspired me. That lettuce stirfry sounds interesting. I have some romaine left over from my "salad days" so I may give that a try tonight.
