    Re: Spinach questions

    yumm garlic stir fried spinach.....

    3 cups spinach
2 cloves garlic, very finely minced
a tablespoon or two of oil ( use canola or any neutral flavored oil)
a drizzle of toasted sesame oil(optional)

get a pan (preferrably NOT a non-stick), heat the pan and add the oil, when the oil is rippling, and almost smoking hot, add the garlic and the spinach immediately after that. toss the veggies in the hot pan, add a pinch or two of salt. cover to let it steam in its own liquid, if there's non, add a tablespoon of water, about 3 min. uncover, drizzle with sesame oil for a more nutty asian flavor, and serve hot.
you can use this recipe for a lot of leafy veggies, like swamp cabbage(ong choy), chinese broccoli leaflets(gai lan), brussel sprouts, bok choy, etc.

I like to fry some crumbled up bacon and then add the spinach and fry until really soft.

oh i have another one, my mom used to make these when me and my siblings were still kids, deep fried spinach.

deep fry the spinach leaves, let these crunchies drain on a paper towel and salt them as soon as you get it out of the fryer. dip in mayo and enjoy them like chips.

Saute some finely cubed chorizo, add some minced garlic (cook for a minute or so), then add your spinach and cook just until it's all wilted.

Also wonderful sauteed with a couple of pinches of 5-spice powder. (saute powder briefly in oil before adding spinach).

I just discovered the joys of 5-spice powder, but I never thought of using it with spinach. I am getting plenty of baby spinach out of the garden right now, so I will try it tomorrow! It's a shame I already had dinner!

One of my fav ways to cook spinach is sauteed with olive oil, fresh mushrooms and garlic. I add salt, pepper and a pinch of cayenne pepper for seasoning. It's great!

                    Re: Spinach questions

I usually boil and drain it... coarsly chop. Saute a couple of cloves of garlic and a hot chili pepper in extra virgin olive oil to flavour it, then toss in the spinach.

Boiled spinach is also nice with a large knob of butter melted in and a handful of parmesan cheese.

you can also sautee in butter then add a little heavy crea, garlic powder or minced garlic (if minced garlic sautee in butter first before ading the spinach), and a little parmesan cheese grated. excellent creamed spinach.

                        Hi Ashley,

make sure the spinach leaves are thoroughly dry, get the oil temp to 375 deg., peanut oil or grapeseed oil works well because of their high smoke point. submerge the leaves in hot oil for about 10 seconds, no more than 15 seconds, as the leaves will start burning. take them out and drain on paper towels. salt as soon as you take em out. Hope you like them as i do!
