  • Reminder I'm Spoiled

    I had a pretty good wake-up call this morning about why Atkins works for someone like me: Because I'm a princess.

    I'm not one whose very good with "can't"... You can't have fat. You can't have sweets. I enjoy eating (which is more than obvious considering I had to find my way to this WOE) and I am ridiculously spoiled on this lifestyle.

    I'd always known this but I was reminded this morning while talking to a coworker of mine whose recently become my new diet/workout buddy.

    She used to be much larger, about 100 lbs larger, but is now at 208 lbs after 5 years of yo-yo dieting with low calorie methods. She has diabetes but its mild enough she says she can keep it in check with eating verses requiring pills or shots. She tried to Atkins with me during my first (failed) January attempt.. but after 3 days decided the diet wasn't healthy and she couldn't live without bread.

    This morning we were talking about what we eat. It was about 11am. She typically takes her lunch around 1pm but was commenting she was starving and couldn't wait for lunch. I asked what she was having... 2 non-fat string cheeses, 10 almonds, 5 saltine crackers. She also planned a sliver of cake later. She asked what I've been eating. And thats when it hit me.

    I woke up this morning feeling better than I have in ages - which says a LOT considering I'm about to undergo surgery to correct a crushed septum and my sleep has been terrible for years.

    I also was not hungry - something that could have nearly been labeled "impossible" for my old self - but knew breakfast must be eaten.

    I indulged myself in a cup of decaf Chocolate Velvet Coffee, mixed with 2 tbsp heavy cream and 2 packets of Splenda (count those carbs!), and 2 hardboiled eggs with some bacon.

    And while my friend struggled to feel full of her handful of Saltines (though I cant snub the almonds or cheese!), I was finding myself happily satisfied on a salad topped with a mound of hand shredded chicken breast and tossed with full-fat Bacon Ranch dressing.

    Dinner will be Fauxtatoes and Garlic Butter Beef.

    ... so ... who can REALLY complain about Atkins? ;-)

    You are so right - who would think we are on a 'diet'!!
    Today I have had
    B: Crustless quiche and cherry tomatoes
    L: Eggs, bacon and mushrooms
    D: Chicken curry over caulirice with a dollop of greek yogurt

    I guess I am spoiled too

          Ah, I would snub the cheese since it was fat-free string cheese! It's kinda funny that people who diet on low-fat go to saltines. Those crackers are soo unhealthy! I knew a girl who ate nothing but saltines and she gained a ton of weight off them.

            What are saltines? Like little crackers? Are they salty?

            Always remind me of sardines...

              Theyre like your basic bland cracker, often times served in little baskets in packages at soup places -- very bland. I used to eat them as a kid with 7up if I had a stomach virus

                I was just thinking the same thing today as I had asparagus with raspberry vinaigrette sauce (made with DaVinci sf raspberry syrup, white wine vinegar, dijon mustard, crushed garlic, and olive oil). Last night, I had chicken, crimini mushrooms and broccoli in Alfredo sauce.

                Last weekend, I went to a mountain cabin with a friend and took a whole weekend full of low carb food. She is not overweight, but she loved every single dish. She offered tastes to everyone that stopped by to visit, and one is a gourmet cook, and he thought it was fabulous. I made a chicken curry with cauli-rice and made homemade mango chutney to go with it and she said it was better than the curry she gets at her favorite Indian restaurant. I thought she was going to lick the bowl.

                She wrote this to me just today:

                I'm still thinking about the heavenly food you made and brought to the cabin. Mmmmmmmmm! Thank you, Sunny.
