Back on the wagon again, but this time for good

  • Back on the wagon again, but this time for good

    Reminds me of that old song "Back in the saddle again", but this time it's "Back on the wagon again" lol.

    Well, with the diagnosis behind me, and this months check arriving, I started back on low carb eating Monday. At least with the diagnosis I know now it's no longer a choice, it's a have to, and I can deal easier on a diet if it's a have to.

    Even my son is slowly being intagrated to a more gluten free diet, but he has to be intagrated just a little more slowly. I showed him the pictures of the homemade cheese crackers I found a recipe for (all cheese, nothing else) and he can't wait to try them. He's a major cheese lover and will stalk the fridge if I don't lock up the cheese. Sad, but he gets very obcessive complusive at times, part of the Autism I suppose. Could be worse things he stalks, like candy, but he's not much on candy. Loves grapes, watermelon, and certain kinds of apples though. It's a start. Used to be that he wouldn't even try new foods.

    I'm looking into dietary enzymes too that will help us with the digestive troubles, but it's not a cure...just an aid. The diet is the only thing that will make life a little less painful and makes the health problems go away, but it's not a bad thing. Hey, if diet is all I have to do to get better, that's a far better thing that if I had to take medication (which I hate).

    Anyways, trying to figure out what to make for dinner. Any ideas. I had fried chicken lastnight with creamed cauliflower. YUM.

    Welcome back! I made a the best chicken dish in my opinion ever yesterday!!! It's called Jalapeno Chicken, you can find it on Linda's site! It's sooooooo good!

        I am wheat/grain intolerant and I have made up recipes for several crackers and even bread that are really good. I took some on a weekend get-away and everyone that tried them said they were delicious. I am not missing grains at all.

          That's me, intolerance to wheat and grains, but my allergist went as far as to tell me I have a carb intolerance. I guess that's why a lowcarb diet helps my health problems because it's lacking in a lot more sugars.

          I'd love to know your recipe if you're willing to share.

            I will PM you some recipes for the crackers and a loaf of grain free bread in a couple of days. I am going to UVA (hospital) for treatment nearly every day and I am way behind on everything else. If I forget, remind me!

              Thanks. I look forward to trying them.

              UVA is a good hospital. We used to take my son to the Autism Dr. at the Kluge Children's Medical Center that's part of the UVA. I also had him at UVA hospital for bowel problems. Some good Dr's there. Everyone was so nice to us.
