My husband loves tacos so I surprised him with Tacos tonight. I had a taco salad with a side of green beans.

      Good thread idea!

I'm having salmon on the bbq, asparagas, a few grilled cherry tomatoes with feta cheese on top, and some cauliflower also grilled with lots of butter and garlic....and I'm starving! Can't wait.

I had a salad: romaine, red pepper, jicama, cucumber, tomato, black olives, red onion, crumbled bacon and a hard-boiled egg all with Ken's Buttermilk Ranch dressing.

Not too inspiring I'm afraid, but it was delicious! Hit the spot for me and was easy to prepare!

I had taco salad as well. Found a nice salsa without sugar and it was great.

Last night we had chicken curry with some goji berries added to simulate the sultanas I used to add before Atkins (we are well past the berries rung so these are 'allowed') served over caulirice.
My husband had rhubarb and cream for dessert.

                  Re: what 4 dinner

Yesterday, I had my meals turned around. I had made up a salmon dip the night before and I was wanting it so bad that I had it for breakfast, dipped up with pork rinds. I had seconds for lunch with a salad. I was really not hungry for dinner, but I finally made 2 sausage patties and 2 fried eggs and had that.

Tonight, I am having curried chicken with cauli-rice and a fresh salad from my garden.

This time of year, I really could be a vegetarian, so I made a delicious Italian veggie dish for lunch called zucchini affogate or drowned zucchini. It has lots of fat from olive oil and parmesan cheese, so it was filling. I wanted to eat the whole pan full, but I resisted and put the rest right away before I gave in. It was very easy to make, but tasted soooo delicious! If you can't tell, I am in my "Italian Phase" of finding new favorite low carb dishes.

                  Sunny!

                      Re: what 4 dinner

I found a chicken sausage with ginger and other asian spices at the grocery store, so I grilled those along with a stir fry of snow peas, red pepper strips a tiny bit of carrot, and celery.

I'm on OWL so here is my weekend dinner menu:

Saturday - Breakfast for dinner...eggs, bacon, cottage cheese and 1/2 of a tomato

Sunday - Salad w/ red and green peppers, cucumbers, egg, onion and ranch dressing. Sauerkraut and hot dogs w/ mustard on top.

Boring I know, but we had a really busy weekend.
