        Re: Veggie question

Since you said from the salad veggie list, I would have to say very dark leafy veggies. They are what is keeping my potassium levels up enough that I no longer have to take prescription potassium. Peppers are on the salad list and they are loaded with good for you stuff.
People who say it can't be done, should not interrupt those doing it.

Brocolli isn't on the "Salad" list. Out of salad veggies, parsley is the best in terms of vitamins and minerals.

It would have to be spinach for me. It's amazing how many things you can do with it!

Peppers are my favorite. There is more vitamin C in red/yellow/orange bell peppers than in an orange and also containe lycopene, beta carotine, Vitamin A and have antioxidant properties.

My local Safeway was selling peppers in a package of 4. 2 grean, 1 red and 1 orange for 4.99. I was there yesterday and wanted to get some and they went up to 6.99! Needless to say, I passed them up.

Here's the nutritional profile for parsley:
                            WHFoods: Parsley

And another nutrient blurb on it:
                            Parsley Nutrition Facts

Parsley contains three times as much vitamin C as oranges, twice as much iron as spinach, is rich in vitamin A and contains folate, potassium and calcium. What’s more, parsley is also recognized for its cancer-fighting potential.
