  • The Oiling Of America

    hi all,

I wasn't sure if this has been already posted here or not, but this is fantastic info on how we've all been duped into thinking that low-fat is beneficial to health.

    *long read alert*

I reiterate, it IS a long read, but it's definitely worth it. there's a lot of excellent information in there, plus it's interesting!

OK, my brain is fried after that one i have read similar bits and pieces from other sources. I wish they'd answer the question od vegetable oils being bad...how much and are some worse that others.

the vegetable oil thing made sense to me. when you think about the concentration of oil in veggies, it's pretty low. so when they extract it, it's in a concentration that isn't easily dealt with. plus, those are the ones that evil margarine giants hydrogenate.

olives, coconuts, dairy fat, that stuff is all kind of naturally high in oils, so eliminating the fiber/protein parts doesn't make for all THAT much of an imbalance.

that's how I figure it anyway...I could be wrong.

it's the olive oil I was wondering about. The only vegetable oils I use would be the soy in mayonnaise.

Here is a quote from p 355 of DANDR: "Butter. olive oil and lard worked very well for our heart-healthy ancestors. Or, i you find it difficult to resume eating saturated fat, use olive, canola, or grape seed oil."
