  • Carbalose and other flour substitutes....

    I've been reading lots of recipes that have these in them. What rung are they for?

    Started Atkins 7/5/2008 for the second time

    HW/SW/CW/GW
    197/190/170/140

    First mini-goal: 180 lbs. met 8/9/2008
    Second mini-goal: 170 lbs. met 11/8/2008
    Third mini goal: 160 lbs. (which was my postpartum weight with my second baby)
    Fourth mini goal: 150 lbs.
    Ultimate goal: 140 lbs

    There are many flour substitutes.

    Nut flours (finely ground almonds, walnuts, hazelnuts, pecans, chestnut, etc.) are suitable for the Nuts and Seeds Rung

    Legume flours (soy, chickpea/garbanzo, etc.) are suitable for the Legume Rung

    Grain flours (oat, corn, rye, buckwheat, whole wheat) are suitable for the Grains Rung.

    The "fiber" or non-digestible carb substitutes like carbalose don't really fit into any rung. They are a "your mileage may vary" type thing.
