I've been reading lots of recipes that have these in them. What rung are they for?

There are many flour substitutes.
Nut flours (finely ground almonds, walnuts, hazelnuts, pecans, chestnut, etc.) are suitable for the Nuts and Seeds Rung
Legume flours (soy, chickpea/garbanzo, etc.) are suitable for the Legume Rung
Grain flours (oat, corn, rye, buckwheat, whole wheat) are suitable for the Grains Rung.
The "fiber" or non-digestible carb substitutes like carbalose don't really fit into any rung. They are a "your mileage may vary" type thing.~Megs~
