heavy whipping cream....whipped with splenda. I've heard of the ice cream where you shake it, but I wondered if anyone ever made it into whipped cream before they froze it. Does it resemble ice cream at all that way or is it just frozen whipped cream?

Re: Has anyone ever frozen....
Just frozen whipped cream ... and it doesn't taste as good as before it was frozen.
I tried this recipe once which was satisfying although not as "heavy" as real ice cream. The taste was dead on though. I don't make it often as it is impossible for me to stick to a 1/2 cup serving which means I wind up overdosing on artificial sweetener and heavy cream really fast!Eric

Re: Has anyone ever frozen....
you could try this recipe, and it freezes well.
i made a double batch of this a few weeks back, made 2 cheesecakes to take to a family function, and had some left over, so i put it in mini muffin pans and froze until they were firm enough to remove from the pan. stored them in plastic containers in the freezer and take one out every so often for a treat. i only allow myself to eat one at a time though and not everyday. since sour cream is limited on induction(if that's the phase you are in) the mini muffin tin size is perfectly fine for induction. you could even add a small amount of the unsweetened cocoa to them before freezing to give them a chocolate taste. i still had enough filling left over to make 2, 1/2 cup servings of chocolate "ice cream" to freeze. it's not quite like ice cream, but it's pretty close.

Thanks. DH likes his ice cream so I've been looking for one that will be acceptable to his taste buds.
