  • Ideas for Birthday "cake"

    Any good ideas for something that can be picked up at the store for a legal birthday cake?

    I'm thinking raspberries or blueberries with whipped cream and a candle stuck in the middle.

    I'm sure y'all have some brilliant ideas. We're in a school with no home ec (weird, I know) so it has to be bought at the store and assembled relatively easy.

    Yeah, berries & whipped cream sounds good but there have got to be some better options out there! I know you say it has to be store-bought, but if you were only willing to bake a little bit, there'd be TONS of delicious options. I know of a low-carb cake recipe, but it involves baking ;0)

      Well, this was just sprung on me a couple of minutes ago. I guess I'm the ATkins guru here. Scary, huh?

        A jello cake will be nice. It's colourfull and no sugar. All you need are multiple jello packages (try to have at least 4-5 different flavours and different colours, but no sugar ones). On the top you can put whipped cream and garnish it with blueberries and strawberries. Try to put less water in the jello powder to make it more ferme. Keep it in the fridge before serving.

          Wow Vek!! That's an insanely good idea!! I never would have thought of that!

          Here's another recipe that is quick & easy. You could insert the strawberries into the top of the jello cake!! YUM.

          Cream Cheese and Pecan Stuffed Berries
          Recipe courtesy The Deen Brothers


          20 whole large strawberries, hulled
          8 ounces cream cheese, softened
          1/4 cup confectioners' powdered sugar (use splenda here)
          1/4 teaspoon vanilla or almond extract
          2/3 cup chopped pecans

          Blend everything except for berries. Cut sections out of the center of the strawberries & stuff them with the mixture.

            Where are the recipes for these....they look outstanding! Wouldn't the layers slide off? they look gorgeous!

              OMG! Both of these are great!!! I'll surely do this sometime. The lady in question just went to the Amish store and bought a huge hunk of hoop cheese. She put a candle in it and surrounded it with almonds...

                Recipies are on the jello packages. But put a lil less water than is recomanded, in order to make it more ferme. Do not add a new layer of jello before the old one is ferme enough. Cool the liquid jello before adding it on the top of an already firm layer, because if you put it hot, you risk to melt the old layer.

                  that looks amazing! I was also wondering about this, my birthday is the end of spetember. And while I could live without cake, it just wouldn't be the same without anything.

                    Vek I love your cake pictures. I wish I had had them earlier. Today was my husbands birthday so I made a "cheesecake" using 8 oz cream cheese, 4 oz butter, liquid splenda and sugar free almond and vanilla extracts. I doubled it and added cocoa powder to the other half and made it a two layer black and white cheesecake with some sliced strawberries on top.

                    If any of you ever try the fat fast, a small serving fits the 90% fat content without the strawberries.

                      These are favorites in my house if you're on the nut rung and are in the mood for chocolate.

                      3 Minute Chocolate Cake
                      1/4 cup almond flour
                      1 tbls. cocoa
                      1/4 tsp baking powder
                      3 tbls+ 1 tsp. granulated splenda
                      2 tbls. butter,melted
                      1 tbls. water
                      1 egg
                      Mix flour, cocoa, baking soda, splenda in 2 cup glass measuring cup. Stir in butter, water and egg. Mix well. Scrape batter down on sides with spatula. cover with plastic wrap, vent by cutting slits in center.
                      Microwave on high for 1 minute 20 seconds
                      2 servings/ 4 net carbs.

                      Low Carb chocolate frosting
                      3 tbls. butter softened, not melted
                      5 tbls. cocoa powder
                      1 cup granulated splenda
                      1/3 cup heavy cream
                      1 tsp. vanilla
                      few drops of water
                      Whisk all ingrediants.
                      Sorry, I don't have the carb count for this.
                      You'll have frosting left over. This is the frosting I use for the Low Carb Brownies.

                      I like to cut the cake in half when I frost it. A mini cake! I also like to decorate it with sliced almonds and design a flower on top.

                      Low Carb Chocolate Walnut Brownies
                      1 1/4 cup plus 1/2 tbls. almond flour/1/2 tbls to dust baking pan
                      4 oz powder cocoa
                      1/2 cup butter
                      2 cups splenda
                      1/2 cup heavy cream
                      5 large eggs
                      1 tbls. vanilla
                      2 tsp. baking powder
                      1/2 cup chopped walnuts
                      Melt butter and add cocoa, mix well.
                      whisk together 1 cup splenda and 1/4 cup heavy cream. Mix well with cocoa and butter. set aside
                      electric mix eggs, 1 cup splenda and vanilla on low. Add chocolate mixture.
                      With spoon, add baking powder, 1 1/4 cup almond flour, walnuts, 1/4 cup heavy cream. Mix well.
                      Spread evenly in oiled and dusted 8 inch baking pan,(1/2 tbls. almond flour).
                      Bake at 325 degrees for 35-40 minutes or untill toothpick comes out clean.
                      Cool completely and frost with above Low Carb Chocolate Frosting.
                      Frosted Brownies Yield-

                          Hi,

                          Here is a recipe for spice cake:

                          CINNAMON SPICE PORK RIND CAKE
                          Ingredients:
                          7 egg whites, room temperature
                          2 cups of pork rind flour***
                          2 1/4 cups Splenda or 6 tablespoons Sweetbalance (use more or less to
                          adjust to personal tastes)
                          2 tbsp cinnamon
                          1 teaspoon ground nutmeg
                          1 tablespoon cinnamon extract
                          1 teaspoon baking powder
                          1 teaspoon baking soda
                          1 cup soured, scalded, heavy whipping cream (33-35% milk fat)
                          3/4 cup boiling water
                          4 egg yolks

                          *** One 80 gram bag of pork rinds yields exactly one cup of pork rind
                          flour.

                          Using a blender or food processor, grind pork rinds into a fine flour
                          or brown sugar-like substance by placing one pork rind at a time in
                          blender or food processor and grinding it.

                          To sour the cream, add 2 tablespoons vinegar to the heavy whipping
                          cream. To scald cream, bring to a slow boil and remove from heat
                          immediately.

                          Direction: Preheat oven to 350 Degrees Fahrenheit. Lightly grease one
                          16X16 rectangular cake pan, or two round 8 inch cake pans, or two 8X8
                          square cake pans. Set aside. In a large bowl, add pork rind flour,
                          sweetener, cinnamon, nutmeg cinnamon extract, baking powder, and baking
                          soda. Mix until thoroughly blended. Add scaled, soured cream and
                          boiling water. Beat on low speed with an electric mixer, or with a hand
                          whisk, until well blended.
                          Add egg yolks and beat until smooth.

                          Beat egg whites with an electric mixer on low speed, or with a hand
                          whisk, until egg whites are thick and frothy. Increase electric mixer
                          to high speed and continue beating egg whites until stiff, white peaks
                          form. Be careful not to over beat the egg whites, as they will lose begin
                          to lose their volume. Gently fold in 1/4 of the egg whites into the
                          cinnamon batter.

                          Fold in the remaining egg whites, working quickly yet gently to preserve
                          the volume of the egg whites.... Bake for 30-36 min.


                          Cream cheese frosting
                          8oz.cream cheese,1/4 cup butter, 1 tbsp vanilla, and splenda,
