  • wow, that was good!

    I had to share with everyone that i just ENJOYED a dinner! I dont have time to stand over a stove most days to try recipes so most of my dinners are just seasoned meat and vegies..blah blah boring. Anyway, yesterday i marinated some stir fry steak the kind thats cut in strips (olive oil and montreal steak seasoning) and broiled it..well, today I had left overs and made a philly cheesesteak omelet..dont know why i never thought of this before and im sure i didnt discover it and was not the first to enjoy one but wow that was good. I sauteed some onions and mushrooms in butter while i cooked one side of my omelet then i spread them into the egg..flipped it over blah blah cooked the other side..heated up my left over steak layed cheese in the omelet (i used cheddar, but if i had some mozzerella or provolone on hand im sure that woulda been great too!) added the steak and i cheated a little on the last thing i added because i drizzled some A1 over the insides before i closed it up! Dont worry it was no where near the serving size i know that stuff is a no no! There are so many different ways you could make one of those..i woulda liked some green pepper and one of the cheeses i mentioned instead of cheddar, but i was in heaven woulda kept eating too if i didnt run out of omelet..lol anywho just thought i would share my success on making something GOOD.       That's so great! Isn't it amazing how creative you can be in the kitchen even with limited ingredients? I've been craving a philly cheesesteak style meal for a few days. . . maybe it's a Washington thing. Thanks for putting up your omelet recipe, I'm going to try it tomorrow.

        How wonderful! I love cooking and finding different creative ways to stay within my Atkins boundaries but still have fun. I recently shaved a beef roast into meal-size portions and froze them, tomorrow I'm going to make beef & broccoli! YUM. I love the idea of philly cheesesteak too - hadn't thought of that - thanks, Lucoco!!!!
