I used to stay away from cream of... soup since it was so loaded with fat, but now I'm in Induction phase, are there good recipes for Induction-friendly cream of... soup?

Usually in the winter I make cream soups by boiling cauliflower (sometimes i thrown in some onion too) in chicken stock, then when it's soft, use a hand blender to 'cream' the cauliflower. Add some heavy cream to taste, salt pepper etc. That makes my base or a basic cream of cauliflower soup, or I make different variations:
add roasted red peppers (before blending)
cubed chicken
sauteed mushrooms (cream of mushroom soup)
diced bacon and top with some shredded cheddar
cooked broccoli (cream of broccoli soup)
it's a very quick and easy soup...I don't have exact measurements I just kind of wing it depending on how much i'm making etc. It's a pretty forgiving recipe and hard to screw up. add more stock for thinner soup, more cauliflower for thicker. More or less cream to taste, or even sour cream instead. You could also use cooked leftover cauliflower and skip the boiling step and it would be even faster.
Also an excellent way of getting in your veggies!

I saw an Emeril show once and he made this onion soup that looked fantastic.. from what i understand :
Fry up crumbled bacon in a good size pot, remove the bacon and leave the grease.
Take Red, White, Pearl, and Shallot Onions, slice into pieces probably about 1" in length, then brown in the bacon grease. Throw in a bay leaf and some oregano.
Then when the onions look carmelized, add part beef/part vegetable stock and bring to a boil and let simmer.
Add your seasonings to taste (he used a sprinkle of flour to thicken it up, but I would use flax or crushed pork rinds). Then add 1-2 cups of cream.
He garnished it with the crumpled bacon and some green onion, and it looked creamy and fantastic!!! I haven't tried it yet; I'm in Cali, and winters are rare so i'm biding my time!!
