I found Spaghetti squash in UK!!

  • I found Spaghetti squash in UK!!

    I went into Waitrose to stock up on their cream cheese (less carby than philly brand) and found they have spaghetti squashes!!

    Only small ones about the size of an ogee or small honeydew melon but still !!

    They do keep for a week or so if kept cool I believe so I bought 3.
    Wondering how to get 'most' of your net carbs from your induction veggies?

    eli, is this the first you've had speghetti squash?

      It will be my second time.

      After keeping an eye out for years I finally I did find one a few months ago and tried it but it didnt seem to fall into strings like the pics I have seen (though it did make a nice meal with some bolognese-style sauce I made).

      I did like I saw in some threads and stabbed it all over then microwaved it.

      Is there a more foolproof way of cooking it?
      Wondering how to get 'most' of your net carbs from your induction veggies?

        all i have ever done is cut it in half, lengthwise, scoop out the seeds, smear butter on it and wrap it in foil and bake. i don't like sauces on my squash. i just bake with butter and served with maybe sour cream. it's always turned out 'stringy' like you have seen described.

          I just bought one the other day and have yet to cook it, I wasn't really sure how - I was just excited at the store and wanted it lol!

            How wonderful! I have five growing in my garden, one is almost ready to pick. Its my favorite squash!

              That's what i'm having for dinner tonite, Speghetti squash and meat sauce. Yummo!
              They do keep well too. Good for you buying 3. I'm so excited for cooler weather so I can keep those kinds of things in my pantry outside.

              Edited to say. I cut mine in half, scrape the seeds, brush with olive oil and bake peel side up on a cookie sheet for an hour or depending on how big it is, maybe longer.

                I think I shall try the halving and baking in foil and see how it turns out. Mine weigh about a pound and a half each. How long should I bake it for and how hot?

                  Hi Eli,
                  The one I baked last night weighed just over 2 pounds (whole).
                  I cut it in half and removed the seeds and baked with the olive oil brushed on it for an hour and 10 minutes at 350 degrees. Check tenderness with fork.

                    i was going to suggest 350 degress for 30 minutes. i usually bake stuff like this [small and one dish] in my toaster oven. it seems to bake faster than the big over. eli, i always put just a little bit of water in a dish if the squash is in the dish and foil covered. the bit of water keeps the squaxh moist.

                    so yes, sometimes i wrap the squash in foil and sometimes i put both halves in a baking dish and cover that with foil.
