I'm just going to address the ketosis question. Never mind still being in ketosis, with what you are eating you will never get into ketosis. It takes three to five days to get into ketosis and just eating a little to many carbs will kick you back out for at least 48 hours. Bananas are very high in sugar and starch and very high on the glycemic index. One medium banana has 26.7 grams of carbs, 2.7 grams of fiber, for a total of 24 net carbs--more than you are allowed in a whole day on induction. Pasta, whole grain or not, will not allow you to get into ketosis. Atkins is high fat, not high protein. Excess protein is converted to glucose. You will get into ketosis when your fat intake is high, protein medium and carbs low.
If you are wanting to build a muscular physique, you're gonna have to do better than a whole diet of processed foods. Those sugar alcohol carbs are tricky: If they give you severe digestive system distress, then you are probably only digesting the 2 net carbs. If they do not bother you, and it doesn't sound like they are, then you are digesting the whole 20 or so grams of carbs.
