I don't bake often, so I've had the same carbquik for a while. I have made bread with it...it was OK..a bit cakey, in need of bread-texture whihc almond and hazelnut flours help with. I've never made the pancakes, as that would require syrup, and my taste buds would never forgive me if I used AS syrup!! I do use it as the "flouring" part in the breading procedure....you know, flour, egg then breadcrumbs.....using parm, flax, coconut, almond, etc as the breadcrumbs, depending on what I'm making. I also use a little of it (probably 1/2 cup for a 12 serving pan) when I make nut bars. It helps them hold together better than just egg.
