I've fallen in love with having a slice of home-made meatloaf (will include recipe below) on an oopsie roll with a schmear of mayo and a shot of Frank's hot sauce. I've been having that for lunch every day for the last week, along with a small spinach salad (1 cup of spinach 3 sliced mushrooms, my home-made ranch dressing and some parmesan cheese) or on the oopsie roll with some spinach leaves instead of lettuce. Its also great just as a snack in the evening. But I'm wondering if that's putting too much red meat into my diet? Or does it really matter?
my meatloaf:
3 pounds of hamburger
1 small red or yellow onion - chopped fine
1 small jalapeno pepper chopped fine
1 egg
1 cup crushed pork rinds
3-4 cloves of garlic, minced
1/2 tbsp onion powder
2 "splashes" liquid hickory smoke
1/2 tsp ground black pepper
1 tsp hot mustard powder
1 tsp paprika
1 tsp cayanne pepper
1/4 cup fresh chopped parsley
1/8 cup parmesan cheese
Mix all together, put in a loaf pan, bake at 350 for an hour an 15 min.
If I can keep having this as one meal, once a day, with an occasional snack, I've got it made - not only does it taste delicious but I find it so filling, and I don't get tired of it. So am I hurting myself by making this a "staple" of my WOE, or is it all good?
