  • Cool snacks

    It seems I am so short of time, that I hardly have time to prepare my lunch in the mornings. Usually I'm too tired at night to do it and prefer it made fresh the same day! My problem since starting Atkins is if I don't have time to prepare something healthy I just won't eat, and I'm afraid I'm not eating enough the past few days. I managedto get my salad packed which is quite filling(lettuce, chicken, cheese, olives, avacadoes, hot peppers, cucumbers and now capers) but I haven't had time to pack my snacks which usually consist of celery with cream cheese and other slices veggies such as cucumbers and peppers.
    Yesterday at Costco I found ziplocked bags of mini cucumbers and ziplocked bags of mini peppers! Wow! I was so thrilled! All I need to do is wash them off and throw them in my lunch bag for an instant snack. No slicing,dicing or chopping required.
    I munched on some on the way home along with some cheese curds.

      If you are using veggies as your snacks, be sure to count those snack veggies as a part of the 3 cups of vegetables we eat daily according to the book. Also be sure to eat those veggies with some kind of fat or protein in order to delay the insulin response.

      As for non-veggie snacks---cheese sticks or cubes and hard boiled eggs are high in fat, which make them the ideal snack food for Atkins.

        NUTS! I buy almonds with sea salt. LOADED with vitamins and fiber. No need to cook them, thaw them out, etc. I keep a jar at work on my desk and one at home to hit as soon as I walk in the door if I'm starving. (That's when I used to hit the chips. ) One serving of 24 nuts (almonds) is 2 net carbs. When I need something, I usually count out 10 to keep me at 1 net carb. Planters also has a "Nutrition - Heart Healthy Mix" that is also 2 net carbs. So easy, so good, and so good FOR you! In the book (pre-2002) Dr. A recommends a handful of walnuts as a good snack. Most new to Atkins say you can't have nuts til later.... but I'm an Atkins friend from WAY back when nuts were allowed from the very first day and all you had to do was count carbs.... no rungs. The original Atkins diet was big on natural foods... very limited on processed foods... and nuts are very natural.
