  • Help! Carbs are everywhere!

    I've come a long way and am shocked that I'm having this breakdown now; of course, I'm sitting here at my desk at work surrounded by cakes, chocolate and bottles of pop *sigh* It was party day today and I said, "no thank-you" over and over. I still haven't broken and I don't plan on it, but I hate that I get jealous of my natually skinny co-workers who can devour all this carby food and still look great.
    I'm fine as long as I'm not around this stuff but life isn't always that nice. And I just realized that I'm going to be in this situation time and again. What if I can't say no next time? Feeling horribly depressed about this.

    Hang in there sweetie. Did you know it was going to be a party day today? Days like this is when it's a good idea to bring your own Atkins treats as in an Atkins friendly cheesecake or Atkins friendly chocolate cake. I can get you these recipes for the next office party day, so you can have your own treat and not feal left out.
    Let me know and i'll get the recipes to you. What rung are you on? So I know what recipes to look for.

        I know how you feel ... It sucks!! Theres no doubt about it. But try to stay positive, you should feel so good that you have been strong so far and you are gonna feel SOOOOO good tonight when you go home and you can say 'wow, i did sooo good today'.. You have come along way already, dont turn back now.

        I try to remember that there will be time for that later, once i have gone through owl and have reached my goal, there will be times when ill eat a pc of bday cake or have a couple cocktails with friends, maybe make some cookies at christmas. (Not that im ever gonna go back to the bad ways that i used to eat).... But right now i have to focus on ME, not a stupid work part filled with junk food.... ME!

          Thank you all so much! I did feel great when I went home and was amazed at my self-control, which I've never had until recently.

          I would love some recipes for future events Sherri. Thank you! I'm currently on the berries rung but I had to skip nuts and seeds because they are a bigtime staller for me. Even flax causes my weight loss to come to a screeching halt.

          I did know about the work party but my understanding was that it was going to happen in an office on the other side of the building. Plans changed and I became surrounded -yikes!

            Strawberry Pie

            1/2-16 oz carton strawberries, cut into quarters
            1 packet knox gelatin
            1 cup water
            liquid stevia to taste
            Crust
            1 oz almond meal
            1/2 cup coconut meal
            2 tbls. melted butter

            Cream Cheese Layer

            1/2- 16 oz carton strawberries, cut into quarters
            4 oz cream cheese
            Liquid stevia

            Whipped cream
            1/4 cup heavy cream
            Liquid stevia to taste

            1) Pour water into sauce pan add gelatin, let stand 1 minute add 1/2 strawberries, bring to boil for ten minutes. Add sweetner and red food coloring. Place in bowl and put in freezer to chill.
            2) Combine melted butter, almond + coconut meals, press into small pyrex pan(size of bread pan) and bake at 400 degrees for 15 minutes.
            3) soften cream cheese in micro 1 minute add sweetner to taste.
            4) Spread cream cheese carefully over cooled crust, top cream cheese layer with remaining fresh strawberries.
            5) Once strawberry sauce is cooled, pour over finished layers in dish, put in fridge to cool untill firm.
            6) Top with heavy Whipped Cream that's been whipped untill light and fluffy.
            Yields- 4 servings 7 net carbs per serving.

              Chocolate Coconut Candy

              3 tbls. coconut oil
              1/4 oz chopped walnuts (optional)
              1 tsp. vanilla
              3 squared Lindt Dark chocolate (85% cocoa)
              Sweetner to taste

              Put all ingrediants in microwave cafe bowl. Microwave for 1 minute or untill melted and mix well. Put in freezer. Once frozen cut into chunks. 3 servings, 2.5g carbs each.

                Jody's Pumpkin Bake

                8 oz cream cheese, softened
                5 eggs
                1/2 cup granule sweetner of choice
                15 ounce can pumpkin
                1 1/2 tsp. pumpkin pie spice
                1 tsp. cinnamon
                Put the cream cheese in medium bowl and beat with mixer untill smooth. Add the reamining ingediants and beat well. Pour into 6x8 oiled glass baking dish. Bake at 350 degrees for 40 minutes or untill center feels firm and knife comes out reasonably clean, cool then chill before serving.
                1/4 recipe= 9 grams carbs
                1/16 recipe= 6 grams carbs.

                  Doms Cheesecake Pudding

                  8 oz heavy whipping cream
                  8 oz cream cheese
                  8 oz sour cream
                  1/2 cup granule sweetner of your choice
                  1 tsp. vanilla

                  Whip heavy cream untill stiff peak, set aside.
                  Mix other ingrediants untill smooth. Fold in whip cream.
                  Place in pyrex pie dish and set in fridge.
                  Makes 12 servings. 3 grams carbs per serving.
                  This is also good with a teaspoon of lemon extract. Gives it a nice zing to it.

                    Clouds

                    8 ounce cream cheese
                    1 stick butter
                    1 tsp. vanilla
                    3-4 packs splenda

                    Mix all ingediants well. Drop on wax paper by spoonful. put inot freezer to set. Then place in air-tight container and keep in freezer.
                    18 carbs for whole batch.

                      Morn'in Chrissy,
                      Those are just a few recipes I have. The rest of them have more nuts in them as in almond flour and flaxmeal. For a chocolate cake recipe with chocolate frosting. You said nuts stall you so I didn't add those recipes here.

                          Hi Chrissy,

                          Congratulations on sticking to your guns and not giving into the junk food at your office party. Well done girl, give yourself a huge pat on the back!!!

                          My mouth is drooling after checking out the recipes Sherri posted....make a couple of those the next time you have an office party....you'll have a great time not worrying about giving in and I'm certain others will go nuts over them.

                          Keep up the great work, you're doing awesome...way to go!

                            Sheila's Kick-Bottom Induction Pumpkin Mini Cheesecakes
                            Makes 6 mini cheesecakes
                            9 total (or 4.9 net) carbs per mini-cheesecake

                            2 (8-oz.) packages cream cheese
                            1 (15-oz.) can 100% pure pumpkin
                            1 cup heavy cream
                            2 beaten eggs
                            1 tsp. vanilla extract
                            1 teaspoon ground cinnamon
                            ¼ tsp. ground nutmeg (optional)
                            ½ tsp. salt
                            6 packets Splenda
                            6 mini pie tins (supermarkets, dollar stores)

                            Smooth ingredients together in mixing bowl, incorporating eggs last. Transfer to 6
                            Pam-sprayed mini pie shells. 400° for 15 minutes; then 350° for approximately 35 additional
                            minutes, or until done.

                              Thanks again Sherri! The pumpkin bake was so good that I told my mom that I'm bringing it for Thanksgiving dinner And will definitely give the mini cheesecakes a go!
