  • Better than rotisserie chicken

I make this all the time.

Place one chicken hen in the crock pot. Sprinkle an herb mixture you like, like lemon pepper or italian seasoning all over the chicken. Turn it on med heat, (or low if your cooker is like mine and cooks really hot) and check it after a few hours. No water, no nothing.

It is moister than what you pick up at the store, and no injected hidden sugars. I know this isn't a food forum, but I didn't want to re-confuse the 'hungry' thread!

Ooooooh! Great idea. I love using my crockpot. Drop food in and walk away.

                  Re: Better than rotisserie chicken

I think the crockpot/slow cooker must be my most-used kitchen gadget since I started Atkineering.
In fact I have just browned some pork chops and put them in my large one with some mushrooms, chives and herbs so we will arrive home tonight to a deliciously smelling kitchen and quickly served meal, as well as some great leftovers for future meals.

BTW I have 3 slowcookers of varying sizes and sometimes have all three on the go!!

I usually leave mine on the 'hot' setting all day (I add extra liquid so it doesnt boil dry) as my husband's false teeth can't cope with chewing, and the meat is always soo tender it almost melts in the mouth.
Wondering how to get 'most' of your net carbs from your induction veggies?

Elizellen you sound like the perfect person to ask: A few months ago a fried made some BBQ ribs in the crock pot and the meat literally fell from the bone. She said she just used water, garlic powder and a couple bottles of store bought BBQ sauce loaded with sugar. Do you know of any lower carb ways to pull something like that off?

                      Re: Better than rotisserie chicken

I know you can buy lowcarb barbeque sauces from various lowcarb websites, but am not sure which ones you could get hold of where you live.

However I did a quick google and found a few recipes which do not look too difficult to make

Sugar-Free BBQ Sauce - Low-Carb Barbeque Sauce Recipe
Almost all commercial barbecue sauces are loaded with sugar. Most I've seen have 16-30 grams per quarter cup, but I've seen them as high as 44 grams! It doesn't have to be that way. This one has a secret ingredient - diet cola. It's best to use one sweetened with Splenda, but any will do (aspartame tends to lose its sweetness when heated for long periods).
                      Ingredients:
                      • 2 strips of thick bacon, chopped fine (or see note)
                      • 1 small onion, minced
                      • 1 clove garlic, minced or 1/4 teaspoon garlic powder
                      • 1 small can (6 oz) tomato paste
                      • 1 can (12 oz) diet (sugar-free) cola - Splenda-sweetened preferred
                      • 1/4 cup low carb (sugar-free) catsup, (or see note)
                      • 3 T mustard
                      • 1 Tablespoon Worcestershire sauce
                      • 1 pinch ground cloves
                      • Hot sauce to taste
                      Preparation:

Note 1: If you prefer to leave the bacon out, add 1-3 teaspoons of liquid smoke, to taste, near the end of the cooking. Alternatively, add some smoky flavor using 1 teaspoon of smoked paprika, or chipotle powder to taste.

Note 2: If you can't find low carb catsup, leave it out, but add about a tablespoon of vinegar and some sweetener, to taste.

                      1) Fry the bacon in a saucepan - a 2 qt pan works well.

                      2) Add the onion and cook over medium until soft - 3-5 minutes. Add garlic at this point if you're using fresh and stir it for half a minute or so.

                      3) Add the rest of the ingredients, plus about half a cup of water. Stir well. 4) Simmer for 20-30 minutes. It will cook down a bit and flavors will combine. 5) Adjust the seasonings so you have the balance you want - you can add vinegar, artificial sweetener (liquid preferred), or hot sauce. (If it's too hot, adding more sweetener will tone it down.)

The recipe makes approximately 10 servings of 1/4 cup each. Each serving has about 3.5 grams of carbohydrate plus 1 gram of fiber.

Low Carb Barbecue Sauce Recipes, Healthy But No Compromise On Flavour
If however you want something with a more traditional tomato base then this is essential reading. You’ll need to be patient in order to caramelize the onions but it’s worth it!

                      Ingredients:-

                      • 1 onion finely chopped
                      • 1 tablespoon water
                      • 1 can of chopped tomatoes
                      • 1 tablespoon of tomato puree
                      • 3 tablespoons of cider vinegar
                      • 3 tablespoons Worcestershire sauce

                      A pinch each of:-
                      • chilli powder
                      • cinnamon
                      • paprika
                      • salt and pepper all to taste

Method:- Put the onions in a non stick pan with a tablespoon of water and cook very very gently for an hour or two until the onion starts to brown (not burn). This caramelizes the onion in it’s own natural sugars and creates the sweetness when added to the tomato sauce.

Plenty of time now to light the BBQ.

Throw the onions and the rest of the ingredients together and bring to the boil, simmer for 30 minutes and now you’re in business. A healthy low carb bbq sauce.

                        Re: Better than rotisserie chicken

Your raw chickens are cheaper than rotisserie? Your lucky. I can get a rotisserie chicken for $6 but it costs about $8 for a raw one. Next time i get one on sale I will try it in the crockpot. I bake mine and they turn out really juicey all the time. I put seasoned butter under the skin (softened butter mixed with whatever i am seasoning the outside with) and i baste with butter too. My fav seasoning is achote(hispanic foods isle of store), salt, pepper and garlic. I used to make them with chipotle but the adobo has sugar in it so i had to give it up.

For my BBQ ribs I took the ribs and stuck in my crockpot. I then took the Heinz low carb ketsup and added an equal amount of water to that I added 2 Tbls of mustard and 2 packets of splenda. mixed it all up and poured it over the ribs. Let cook all day and I thought they were pretty yummy. I also used this on chicken. I like a sweet taste sometimes and if I want spicey I just don't use the splenda or the ketsup and I add a wing sauce (some are carb free). I liked it.
