  • Atkins Bake Mix -- what was it?

    Does this sound right?


    Try this homemade baking mix instead of the commercial mix for low carb recipes.
    Prep Time: 5 minutes

    Ingredients:

    • 1 cup soy flour
    • 2 cups soy protein isolate
    • 2 Tablespoons baking soda
    • 1 teaspoon salt
    • 2 Tablespoons Splenda

    Preparation:

    Sift soy flour, soy protein isolate, baking soda, salt, and Splenda. Store in an airtight container in a cool, dark place. Use as you would the commercial Atkins Bake Mix.

    Yield: about 3-1/4 cups

    Carbohydrate count: 3 carbs per 1/2 cup serving
    Walk cheerfully upon the earth, and let your lives speak.

        I believe so. It's not like it has yeast in it, so it doesn't need sugar to make it active. Right? It will work without the Splenda. If you want a healthy sweetner you can use smart sweet.

            Sherri, do you use xylitol? We use that, my DD takes her pills in it every night.

              Yes, Xylitol (derivitive of Birch, hard wood)and Stevia are my two sweetners of choice. That is, when i'm not on a sweetner fast as I am now.

                  Using soy, you need to be on rung 6 for legumes.
                  On the nut rung I baked with almond powder and flax power and whey. (I still do)

                    Thanks Liv...I keep confusing soy with nuts instead thinking of them legumes. Good thing I am past both rungs...LOL!
