  • Potluck

I am going to a family potluck on Saturday. I need good low carb stuff to feed a lot that is fairly inexpensive. I thought I would make the "clouds" for my dessert item. Any other suggestions are appreciated.

Take a look in our Desserts forum - there are several great induction-legal cheesecakes there as well as lots of other ideas. Desserts - Atkins Diet

For savoury foods I usually make a crustless quiche and maybe a tray with ham/cheese pinwheels, asparagus in smoked salmon and slices of red pepper stuffed with cream cheese

Wondering how to get 'most' of your net carbs from your induction veggies?

My favorite is pickle dogs... Buy a jar or two of vlasic pickles-I like the zesty kind. Buy some no sugar addded ham slices. Spead a nice layer of cream cheese on the ham. Roll up a pickle in the cream cheese covered ham slice. set with a toothpick. They are 2-3 carbs (depending on the pickle and if you can find no sugar added ham slices) They are super good and everyone who tries one always wants another.

you have to look on the internet as i dont have a link.. but i found a great stuffed mushroom recipe... most of them use a breaded stuffing.. i found one that was cream cheese, parmasean cheese and spices... you bake them and they are to die for.. this was before atkins and i have not had them since however, they would be legal

stuffed jalapenos: slice them in half, take out the seeds, fill them with cream cheese, put on a microwave safe tray. When you get to the party, pop them in the microwave for a minute or two (until the cream cheese is melted slightly.) Serve. You can bring along bacon that has been cooked until crispy and crumbled (big crumbles) and top each jalapeno with that after it's been nuked.

And also the devilled eggs suggestion. Eggs are relatively inexpensive. Plus people don't make devilled eggs as often as they used to, so it's a treat for many. The American Egg Board has the "classic" devilled egg recipe and variations.

Also if your family likes cooked vegetables, buy a bag or two of frozen broccoli. Cook it, and then serve home-made hollandaise sauce on the side. Hollandaise is easy to make, it's inexpensive and it's one of those things people just don't make anymore.

                    Re: Potluck

I always make Cauliflower Casserole for potlucks, family get-togethers, or dinner on the grounds at church. Everyone loves it.

                    steam cauliflower until it's soft.
add some shredded sharp cheese, cream cheese, and sour cream.
Season with garlic salt, onion, and bacon bits.
Top with crushed pork rinds and melted butter.
Bake at 350 until golden and bubbly.

I don't put measurements because you can make as much or little as you want.

Everyone goes nuts over this. My mother in law wanted the recipe after she ate half the dish. She almost puked when I told her the topping was pork rinds. HeeHeee.

Thanks so much! I love deviled eggs I just wasn't sure if I was up to peeling that many eggs. Hubby has a huge family. I may take some of those and something else with it. The cauliflower cassarole sounds good! I want to make that for my house! Kelly do you leave the cauliflower florets whole when you add the other stuff? It's not like smashed up like the "potatos" or is it?
