  • I'm still here

    Hi everyone,
    I fell victim to my old carb ways for about a week but I'm back on track and holding at 185. Luckily I didn't gain weight. I wasn't eating a lot of calories in a day but it was carbs, carbs, carbs.
    I know why I fell off. Life got extremely busy and I didn't have time to shop or cook and stopped getting enough variety of the good stuff. Sometimes I just wouldn't have supper, other than a small handful of nuts and a bit of pepperoni and some mini sweet peppers as I'd rather have just that than go for the quick and easy carbs.
    That led to cravings, and I gave into stress and eventually ate junk.
    I wasn't taking care of myself and that led to the fallout.
    Back on track, life is still extremely busy and will be until mid December when we get settled into our new house. Now we are having to do open houses and showings, trying to keep the house clean with 5 boys in it, going to work, to my course and just the day to day family stuff.
    I am going to stay on track because I know once I'm settled, it will be that much easier to have time to cook and between now and then, I can still do this.
    I also didn't come to the boards for support either and I know for me, it's crucial to have the support here.
    Now, what to do with that cauliflower...

    Hang in there, Chiloe. Life is a fast train and you just have to learn how to hang on with all that it drives through. Stay focused on your goal and you'll do just fine....don't forget the exercise, drinking your water, and planning ahead. Speaking of plannning ahead, cauliflower is a great veggie to grate like "rice" for stir-frying or boiling like "mashed potatoes" (just add sour cream or cream cheese with seasoning). I've made mexican "rice" with it by just adding seasonings after I stir-fried it in butter. It's really a good thing! Have fun!
