  • Oh Sh*t; Egg Nog!

    I can live without the stuffing, cakes, cookies candies and everything else but... I MUST HAVE EGG NOG! I'm looking for the best egg nog recipe to convert to lower carb. Does anyone have a favorite recipe or tips for the conversion? I know it can be done!

    I was planning on trying this one (from Dana Carpender):

    1c heavy cream (chilled)
    6 eggs, separated
    1/2c splenda
    2c whole milk or carb countdown
    3/4-1c good brandy
    nutmeg to garnish

    Whip your cream, using an electric mixer. Beat till stiff, but don't overbeat- you don't want butter! You'll end up with 2c whipped cream

    Be careful separating your eggs- if you get even a tiny speck of yolk in the whites, they'll refuse to whip. So separate each egg into a little custard cup before adding the white to the bowl you plan to whip them in. Put the yolks in another bowl.

    Make sure you've washed the beaters of your mixer! Whip the egg whites until soft peaks form. Now fold the whipped egg whites into the whipped cream. Beat the egg yolks until light in color and add the splenda. Carefully blend in the milk. Add the brandy. Fold the egg yolk mixture into the whipped egg whites/cream until blended. Serve with a sprinkle of nutmeg.

    Makes 20 small servings, each with: 103 calories, 7g fat, 3g protein, 2g carb (0g fiber)

        If you go to the American Egg Board's website, you'll find recipes for egg nog. Really the only conversion you'll have to make is the sweetener because you'll have to substitute the sugar.

          The Hood's milk, with a few drops of vanilla stevia and a sprinkle of cinnamon, will do for me. It is a little thicker than regular milk, not as thick as egg nog, but it will suffice. A few drops of vanilla and splenda would likely do just as well, but I am really liking the vanilla flavored stevia.

            There's also like, a soy version of an egg nog that they put out.. same with a chocolate peppermint soy milk. They're both really yummy if I remember correctly.

                  NOW Foods - Stevia (French Vanilla) Extract Liquid - 2 oz.

                  This is it. Got it at the health food store, wonderful in chai teas!
