  • Christmas baking disaster

    Ok I have to confess that I love to bake. I usually bake between 20-30 loaves of various breads the week before christmas break begins as gifts for teachers/friends/co-workers. I thought I would do ok. I thought I could handle it. The last 2 days I have eaten between 2-3 slices of baked goods! other than the baked goods I am doing ok. eating a very light atkins diet as the bread kinda made me pretty bloated. It (pumpkin/banana bread) will be out of the house tomorrow and I only have to make about ten more loaves of cinnamon raisin swirl bread and I should have that done by tomorrow evening. I may have to reconsider my dream of opeing my own bakery though...

    Unless you start a low-carb bakery?
    Have you tried some of the many Atkins-legal recipes around? I make several 'breads' and cakes which non-Atkineers eat without knowing they are low carb.
    Wondering how to get 'most' of your net carbs from your induction veggies?

      You SHOULD open a low carb bakery !!!! That would be sooo cool ... And i bet you would be the first to do it ...Infact you should open it in Vegas ( so i could shop there ) ;-)

      As far as your High Carb baking goies .. Would it be sooo bad if you skipped it this year? Maybe buy some store bought gifts you can give.. i know it's not the same, but you gotta remember why you are doing atkins and the commitment you made to yourself.

        Oh yes please! Open it in the UK... I am paying £2.50 for a loaf with 15 slices the same size as a cracker and because it is fresh, you have to have next day delivery at £6 a pop..... and..... fume, fume, it hasn't turned up today like it should...

        Do you have any bread machine recipes?

          Nope no bread machine recipes-dont have one... I did sub splenda for the sugar in the loaves and I did sub 1/2 whole wheat for the white flour. I am gonig to research low carbs flours/baking mix. The bread is now out of the house! If anyone wants to loan me some start up money I wuld gladly start my bakery!!!! I was thinking about having a low carb linup option if I did start one up. Right now It looks like it is one of those things I will try and start once my kids are in highschool.

            I think you deserve some sort of award for only eating 2 or 3 slices. I know the smell of all that baking would've done me in. I'm usually not much bothered by the non-Atkins menu items. . . .but that lovely bakery smell . . . .oh, my. I think I would've had to confess to the group about eating 2 or 3 loaves.

              Ahh! The last of my loaves are baked and wrapped! Made 2 dozen loaves of raisin/cinamon swirl bread and didn't eat any!- Plus I'm back in ketosis today! I'm gonna go back to induction for a week or so since I overdid my carbs for a few days in a row.
