  • Big Thank You

    I wanted to take a minute or 10 to thank some people here who helped me make my first mini-goal. I had hit a plateau and was close to abandoning this WOE even though I know it works. I kept plugging along in a large part because I didn't want to let my "support group" down. Everyone here has been helpful, but I want to single out a few members who I feel have been especially helpful to me. To use a "Grey's Anatomy" term, you are my people.

    PapaDeuce- One of my first "friends" on this board. I think what you are doing for your children is wonderful. I have a lot of the same history as you so I feel we are kindred spirits.

    Chef Kevin- Another one of my kindred spirits. Definately someone I could hang out with.

    Barbecuer- If you didn't live so far up north, we would definately hook up and cook up regularly.

    babypiggy- I hope you get over your stall, your dedication to this WOE in the face of no results has inspired me.

    Shaunawa- Even though you thought I was a girl, we are still siblings. I hope your knees get better.

    Plsmachic- We have never personally corresponded, but your posts rock. You have to be one of the happiest people I "know". I look forward to your daily postings on STAC.

    Liv and Scribbler- Your encyclopedic knowledge of all things Atkins is a wonderful resource that you share freely.

    Bama Kelly, Alaska Girl, Tumtum - You guys are probably the core of my STAC buddies. I always look to see how you are doing.

    Sarina D- You're dedication is amazing. You are amazing. If your story doesn't motivate people, they need to check their pulse.

    There are many other people on this site that are motivating, sorry if I left anyone out. I absolutely had help reaching my first mini-goal, so my success is our success. Keep strong, and take a bow, WE have earned it.

    tfek70, you are so funny!! I thought you were a girl too! It took me a few. When you sent me a message or was it a post?? I thought you were a girl! After I read your message, I got the real picture!

      Oh yeah!! I also wanted to add....THANK GOODNESS we got away from 217. Isn't it nice that number is behind us. I'm looking forward to being "stuck" 20 or 30 pounds from now!!

        EverLosing, we seem to be step for step on our journey. I was 212.8 this morning. I had cauliflower for the first time in probably 30 years last night in lasagna. It was great. Right now I'm eating my first omlette in at least 25 years. I'm really expanding my list of foods I consider edible. I hope you are having fun too.

          I'd LOVE to get your lasagna recipe!! I'm at the point where I need to incorporate a little variety. Aside from baking a Return of the Whooshie Pie, I haven't gotten very creative yet! I need to dedicate some time to making some pleasant dishes. Helps me stay on track. Branching out for me was buying celery and cucumbers!! But now that they're a daily staple, it's time for some more variety. I find that I don't even have the ingredients most low carb dishes call for. I don't have many shopping options here. I like to use the little home owned grocery but they don't have many options. Then, there's WallyWorld. I'd rather die than go into that black hole. Looks like I need to plan maybe one trip per month to the hole.

            I put a post about the easy way to rice cauliflower in the recipe section. You will want to read it before trying this. I don't know why people have a problem doing this, but I explained how to do it the easy way. Also, I put my new pizza recipe in there today. 11 grams of carbs for a whole pizza. I haven't tried the cauliflower pizza crust, but I guarantee it's good and mine kicks it's butt. There is also a pizza crust recipe for deep dish using cream cheese, eggs, and cheese. I heard it's good but a bit heavy. I also made the buffalo chicken dip from the appetizers forum. I spent some time in the recipe forums this morning and got really hungry. I can't wait to try it all.
