Hi all - I've been on Atkins for almost a week now and I'm finding I'm having a hard time getting in more than 1000-1400 calories per day. Is this too low? I'm 5'8 and 260 pounds and my resting metabolism rate is about 2100 so I'm afraid that few calories might lower my metabolism or something. Is this a problem or am I worrying about nothing? I'll include a sample of my daily menu - maybe you guys could see where I might be able to add some calories in without taking in a whole lot more food.
BREAKFAST
2 TB Flax meal w/1 TB cream, 1 egg and 1 tsp splenda & cinnamon
SNACK
2 Deviled Eggs
LUNCH
1 C Spinach Salad w/1 TB creamy dressing
3-4 oz chicken
SNACK
2 4 in pieces celery w/1 TB cream cheese each
DINNER
1 C Broccoli w/1 TB butter
3-4 oz Hamburger Steak w/1 TB mayo and 1 tsp mustard
DESSERT
1/2 C sf jello
