  • question about the book...

    I looked a little closer at my copy and noticed it was first copyrighted in 1992, then again in 1999 and finally in 2002 - it does seem to follow the same rules that everyone on this board has shared so I'm thinking I have the right version since it was last copyrighted in 2002 and that's the version everyone says we should be following.

    Can anyone confirm that I'm right in my thinking, please?

        When I started I did the same thing.
        I had one on the fridge too.
        Remember to start reading labels too.

          The label reading is no joke - we've been buying these hamburgers that are already cooked, just need to be microwaved. They're a lifesaver when you're hungry for something quick. Last night I read the label and they have dextrose, and I just assume the worst with anything ending in "-ose" so we'll be buying ground beef, making patties and freezing them...*sigh*...we even noticed that the prepared tuna salad at the deli counter in our grocery store contains sugar.

          We're figuring out quickly that we need to make everything ourselves - convenience items aren't always our friends.

            You're gonna have to skip "convenience" foods if you want to excel on Atkins. They hide sugar and starches under a lot of different names in processed foods. The more you move away from processed foods, the more weight you will lose and the better you will feel.

              Thanks, Sunny - I'm definitely starting to see that. I was just happy that I could pop a few burgers in the microwave or stop at the store on my way home and pick up some ready-to-go tuna or chicken salad...lazy, I know. Some years ago, I was seeing a personal trainer who recommended the Atkins diet. She used to make a batch of chicken breasts or chicken salad, even jello, and keep it in the fridge so that when hunger struck, she could grab something legal. I wasn't ready for Atkins back then, but I see now (as many on this board have mentioned) that I need to arm myself with legal foods so that I'm always good to go.

                That's the way to do it! I make up lots of things ahead and divide it into individual portions and freeze. So many of low carb recipes freeze really well. I make crustless quiche and a hearty breakfast casserole that even non-low carbers and non-dieters think is great, and they have eaten them from frozen.

                I mostly grill my burgers, so I always make up a bunch while I am at it and freeze the rest. It takes the same amount of grill propane to grill six burgers as it does to grill one. Grilled chicken freezes very well, too. I make up my own marinades for chicken breasts and grill them up by the dozens. I have been eating on some yummy grilled tarragon chicken breasts since fall and they taste like they were just grilled. So easy to thaw one and slice it up on a salad.

                If you buy in bulk, which saves you money, you can take one day to prep and cook several different kinds of meats and freeze them for later.

                I never trust pre-made food. There is almost always something to give it taste that will hinder weight loss. Tuna salad and chicken salad are so easy to make up and the taste is so much better. Moreover, you know exactly what is in it.

                  Tarragon chicken sounds yummy! Have you posted your marinades on the forum? I'd love to try some. Is the crustless quiche and casserole from Linda's site or your own? I'm looking for breakfast-type food that I can grab and go. I know I can be non-traditional with breakfast (tomorrow I'll be having leftover steak), but I do enjoy "breakfast" foods...just don't have time to whip something up each day.

                  My other issue will be portion control.

                      I have posted some recipes, have not some others. I am writing a cookbook, which I plan to publish. I can give you my quiche recipe and my hearty breakfast casserole and I will give you the tarragon chicken recipe, but it takes fresh tarragon, which I grow.
