ok - so my fiance won't ever go TOTALLY low carb as far as atkins goes - but I got this FABULOUS DVD documentary yesterday that EVERYONE who does low carb should watch and should have their families watch. It's called "FatHead" and you can get it off of amazon (that's where i got it). It's basically the ANTI-super size me movie...and he interviews a lot of low-carb doctors and they go into the science behind WHY low fat is NOT good.
he also ate nothing but fast food for 28 days and he LOST 12 pounds because he made GOOD choices by not having soda pops or fries or anything like that (one thing to mention, though, he did eat about 100 on average, carbs per day - but at the very end he tells you he gave up grains and breads too and practically goes on an atkins diet without saying the word).
well - the thing is, it's been VERY hard for me to "convince" him that what i'm doing IS healthy...but after he watched it with me, he's finally understanding WHY i'm doing what i'm doing. in fact when we went grocery shopping tonight he decided that INSTEAD of the rice and potatoes he usually buys for himself - we're doing cottage cheese (the full fat, btw) and broccoli and more vegees.
he said he DOES understand more behind the science now and he wants to try and go lowER carb himself - and while i know i'll NEVER convince him of going as low carb as i do, i feel like it's definitely a step in the right direction to get him away from starches.
for example, he decided to get the 2% milk over the SKIM that he usually drinks. again - just another step in the right direction...getting over the thinking that "low fat" is the way to go.
he even said he was a little mad now that i bought him his oatmeal and raisins at sam's club yesterday cuz he'd like to try and get away from eating that in the morning.
course - unfortunately - i'll never get him to give up his beer...BUT - it will help a LOT for me - food wise - if he doesn't bring those starches in the house anymore (especially the potatoes, as THAT one has been hard for me).
so yeah - while i know i'll never get him to go on atkins - for me, it's a small victory that he FINALLY TRULY understands that this IS healthy and that i'm not crazy!!!!
