    hello!

    at what point are we allowed to have chayote squash? I'm on induction now, and have been craving something apple-y. I've made jicama apples before, but I want to try something less dirty-tasting.

    You know, I've often wondered myself where this falls on the list. I think it should have been an induction veggie as it's so low carb (lower even than jicama i believe), but it's not listed.

    Perhaps you could leave it out for induction, but maybe add it in OWL rung 1 and see how it affects you?

    I love chayote, i'm actually eating one right now ! I like it sprinkled with lemon juice sweetener and cinnamon. I never discovered it until i was in maintanance so where it fell on the list for me was never an issue.

      I would agree, since it isn't listed on the acceptable list, I would probably add it the first rung of OWL, more veggies, but I don't think I would count it as a cheat if you ate it before.
      There are a lot of veggies that the good Dr didn't add, mostly because they aren't very common to US and UK and CA plates.

        I treat it like zucchini - a summer squash that is allowed. Chayote has a little bit more carbs (per 100 gram 5 with 2 fibre) than zucchini (3 carbs 1 fibre) but it is lower on the glycemic index and glycemic load scale. (And it is pretty yummy)

          I've always treated it as an induction vegetable. There's a fantastic recipe for "fried apples" on Linda's site, made from chayote:

            Since he lists "summer squash" separate from zucchini, I assumed that chayote would be covered under the summer squash clause (LOL my legal mind can't think of an appropriate word), 'cause it is a summer squash.

            The chayote (Sechium edule), also known as sayote, tayota, choko, chocho, chow-chow, christophine, mirliton, and vegetable pear, is an edible plant that belongs to the gourd family Cucurbitaceae along with melons, cucumbers and squash.

            Mmmmm I just saw a chayote squash and jicama slaw recipe that sounds out of this world.

                the fried apples are good, and if you make a simple soup with chicken, diced tomatoes, chilies, and add chayotes, they work very well in the soup.
