  • I need a pumpkin sweet recipe

    hi.. what kind of canned pumpkin? do I melt the cream cheese in it? in micro waive? with butter? can I use pumpkin spice? please let me know.. as this sounds really good... can I use splenda? thanks.. Lia

    There are many different variations on it, but here are a few that I do:

    Pumpkin with cream cheese:
    1. Soften 1 oz. cream cheese in microwave.
    2. Add 1/2 can pumpkin, stevia, cinnamon
    3. Microwave until hot. You can add nuts (chopped pecans are THE BEST!) if on Rung 3

    Pumpkin mock danish:
    1. Beat 2 eggs.
    2. Add 1/2 can pumpkin, mix well.
    3. Add cinnamon (or other spices) and sweetener, flax and nuts also optional
    4. Microwave on medium for about 5 minutes
    5. I also add cocoa to this and it's sort of like a brownie!

    Warm Pumpkin:
    1. Heat 1/2 can of pumpkin until warm.
    2. Add spices, sweetener, butter (or ghee if you are DF).
    3. This one is very simple, but suitable for candida-cleanse diets, FODMAP diet, dairy-free, etc.

      I just wanted to add, feel free to experiment with whatever legal ingredients you have! You could also eat it cold and mix it with Greek yogurt, coconut milk, ricotta, etc. if on Rung 2.

        Oh, sorry for multiple postings, but I use Libby's 100% PURE PUMPKIN, NOT the pie filling. You can also buy a fresh pumpkin and roast/puree it yourself if they're in season or on sale.

            Mitzi's Ultimate Pumpkin (MUP) Rung 3

            In a bowl, mix 1/2 small can 100% pure Libby's pumpkin with 2 ounces cream cheese. Microwave for 45 seconds. Stir well, add sweetner of choice, 2 tsp cinnamon, 2 tsp allspice. Mix well, add 1 ounce nuts and microwave for an additional 50 seconds.
            Yields: 15 net carbs for intire recipe

            Pumpkin Bars w/ Maple cream cheese frosting Rung 3

            Pumpkin bars

            Mix-
            1 cup almond flour
            1 tsp. ground clove
            1/2 tsp ginger
            1/4 tsp salt
            1/2 tsp. baking powder
            1/2 tsp baking soda
            1 cup splenda or allowed granule sweetner
            set aside

            Then mix together in a bowl
            1 cup 100% mashed pumpkin
            2 eggs
            1/2 cup canola
            Mix dry ingrediants in with wet and pour into oiled 9x13 baking pan. Bake for 30-40 minute in a 350 degree oven.
            Cool

            Cream Cheese Walnut Frosting
            4 ounces cream cheese
            2 tbls. softened butter
            1 tsp maple extract
            1 tsp. vanilla
            6 packets splenda
            3 tbls. chopped walnuts
            Mix all together untill smooth then add chopped nuts and spread on cooled bars.

            Jody's Pumpkin Bake -Induction Friendly

            8 ounces cream cheese, softened
            5 eggs
            1/2 cup granular splenda
            15 ounce 100% pure pumpkin
            1 1/2 tsp. pumpkin pie spice
            1 tsp. cinnamon
            Put the cream cheese in a medium bowl and beat with mixer untill smooth. Add the remaining ingrediants and beat well.
            Pour into 6x8 greased glass baking dish (pie dish)
            Bake in 350 degree oven for 40 minutes or untill center feels firm and knife come out clean, cool then chill before serving.
            Yields: 1/4 recipe = 9 gram carbs
            1/6 recipe= 6 grams carbs

                Thanks for sharing your recipes, girls. It's nice to have fresh ideas! I cleaned out my pantry on Friday and found 2 large cans of pumpkin...it's like finding candy for me .
