    Keriann and greenday -- both of yours sound like "must trys" this week! Hmmm. Gotta start searching for goat cheese--don't know if i can get it here.

      Two recipes from "Dr Atkins' New Diet Cookbook" (1997 edition)- Cheese-Tease Omelet, and a close runner-up is the Two-Cheese Omelet.

      Cheese-Tease Omelet: (4 servings, 5 carbs per serving)
      8 eggs
      1/2 cup creamed cottage cheese
      1/2 cup cream cheese, softened (I use whipped)
      pinch salt
      2 packets sugar substitute (I sometimes use DaVinci syrups)
      1 tsp vanilla
      1/2 tsp cinnamon
      1/4 cup heavy cream
      3 TBS butter
      2 TBS sour cream (optional)

      Combine all ingredients except butter and sour cream in a bowl and beat with wire whisk or mixer until smooth. Melt butter in a large nonstick omelet pan. Follow recipe for basic omelet. Slide out of pan and serve plain or garnished with sour cream. (I like to pour Walden's Farms pancake syrup on top).

      Two-Cheese Omelet: (2 servings, 4 carbs per serving)
      2 TBS sweet butter
      2 TBS onion, minced
      4 eggs
      2 TBS heavy cream
      1/2 cup each of two cheeses, grated (best with one hard and one soft cheese, such as cream cheese and cheddar, or Camembert and parmesan)
      1 TBS chopped parsley

      Heat butter in nonstick skillet over medium heat. And onion and cook until transparent. Beat eggs with cream and soft cheese. Pour into pan. Spread egg mixture by tilting pan. Cook until set. Sprinkle on grated cheese. Cook 1 minute. Slice egg pancake in two. Fold each semicircle in half. Flip over to melt cheese and brown both sides. Garnish with parsley.

        shredded, presauted in butter zuchinni....tastes great and gets my veggies in early in the day

          I am pretty simple: onions, gr pepper, cheese, tomatoes. BUT my dad taught me to put about a half to one tablespoon of regular yellow mustard and wow is that good. Whole new level to eggs. Which sometimes can get very boring.....

            Yum! Some great ideas here

            I had bacon, chilli flakes, tomato and cheddar this morning and it was delicious - really filling too - I couldn't finish it all! I may try making it with just two eggs next time.

            I am going to pick up some avocados today so I can have the bacon, avo and cheese one (may chuck some fresh chilli in there too) in the morning

              Sausage western:

              Sautee green peppers and onions in a buttered pan; Cook and brown sausage links and then slice into little bites. In a cup, mix 2 eggs with a splash of heavy cream and a drop (or two) of tobasco sauce. In a new pan, throw some splats of butter in and when melted pour eggs into pan and cover with lid. Allow to cook on medium-low until middle is a tiny bit runny. Add peppers, onions, and sausage pieces to one side and then top with cheese. Fold other side over and smash with spatula. Sprinkle a little bit of water around the omelette, quickly cover with lid and allow the steam from the water to melt the cheese and finish cooking the egg. Should slide right out!

                Reading this has made me want to cook omelettes for dinner tonight but the family is expecting tacos.

                If I make an omelette I like onions, green pepper, sausage, and cheese. Pretty plain but yummy.

                I'm glad you started this thread Zarabelle! I am deffinately going to be trying different things on my omelette instead of my usual stand by.

                  I just wanted to add a note of caution about the 'cheese-tease' omelette recipe posted earlier by Tstormchaser, which was from a pre-2002 cookbook from Dr Atkins.

                  At some time after writing that book Dr Atkins decided that cottage cheese should not be included on induction but reintroduced on the 2nd OWL rung along with the other dairy products. So save that recipe till then

                    I haven't had an omelet since starting induction! I'll have to work one in sometime this weekend. I've always liked ham, cheddar and chives. And butter!

                    On a similar note if anyone has issues with joint inflamation try adding turmeric. I suppose you could add it to anything but I've always added it to eggs - doesn't change the flavor and makes them extra yellow.
                    I like my milk raw, my eggs pastured and my beef grass-fed.

                      mmmm.. yellow mustard sounds great, can't wait to try it!
                      For a quick omlettte i add yellow cheese and scallions (or chives if i have any) using 3 eggs/olive oil, If i have a little patience I sautee diced onions and mushrooms in butter and then 3 eggs and sometimes yellow cheese. also yellow cheese and avocado using 3 eggs/olive oil is awesome, but right now avacados are really pricey in our neck of the woods.

                      fresh basil, chopped or fresh oregano or parsley always adds a unique quality but i don't always have the time to chop or the herbs in the kitchen.

                        I had a fantastic omelette tonight. I used two eggs (instead of three) which I much preferred and added about 1T double (heavy) cream and whisked with a hand whisk. I then melted butter in the pan, added the egg mixture, added spinach and parma ham and chilli flakes and black pepper and then cooked for 2 mins. Added cheddar cheese and continued to cook for one minute and then added tabasco and put under the grill (broiler?) for three minutes. It was sensational!!!

                          If I had not just eaten some freshly roasted chicken skin pieces, Zarabelle I would really be drooling over the thought of your omelette now

                          Adding cream makes it so rich and filling - so much better than the milk some cooks add to theirs.

                            i use the eggs in the carton and have no problem with them staying together.

                            i put jalapeno, green pepper, a little oion (it makes me stall), mushrooms, and bacon. I think it taste even better to let it sit in the fridge over night...it drys out the eggs a little

                                I tried planetclaires omelette (bacon, cheese, avacado) but I added 2 TBS of sour cream to it! It was heavenly!
