    Y'all might think I'm crazy, but I've made a taco-omelette....just the taco meat and cheese...sour cream and salsa on the side.

    Successfully did Atkins in 1998 using 1992 copy of the book...before it was "hip". Lost 60lbs, exercised daily, felt and looked great. And then I moved in with a junk-food loving man, my mom got sick and passed away, then I suffered a spinal cord injury, and junk-food dude left me...and now I weigh 292lbs. That's 22lbs MORE than I weighed the first time around. It's 10 years later...I know this will work for me again.

      Rajenki's idea sounds real good.
      I used to make omlettes with mince, chopped tomato and cream cheese and cheese.
      Its fantastic!
      Or even smoked fish from the day before, sounds really weird, but add some butter and tofu and it tastes just like noodles!

          Think outside the box a minute...

          My favorite omelette filling of late, started when there wasn't quite enough meat & veggies in my skillet to suit me, fixing lunch to take to work with me (also, hadn't eaten yet so was hungy). I stir fried as usual, all together with some oil (or fat), then towards the end decided to toss in some eggs and stirred it up, put the lid on & then finished dressing...

          Came back to the best combination breafast lunch ever! Ate half; packed the other. I've done this several times since - the EGGS are the omelette filling that's the best! Each time the stir fry is a little different - I leave room in the pan, cook it, then add the eggs, sometimes also cheese & mushrooms on top with seasoning - and put the lid on, turn the cooktop off and it finishes on its own in about 3-5 minutes.

              I like pesto and mozzarella in my omelettes. I make a three egg omelette, use about 120g mozzarella cheese (a whole cheese if you buy them in Tescos) and about a tablespoon of pesto sauce from the jar.

              Cook the omelette as usual, then when the egg on the top has stopped running, smear on the pesto and place slices of mozzarella on top. Flip the omelette over to make a half moon shape, cover and cook for a few minutes.

              Then I cut it in half, one half for me with a bit of salad and the other half for the husband.

              Very nice.
