Is organic bacon nitrate free? I have looked everywhere and can't find any bacon that is nitrate free.

Try your local butcher. Mine claims that they are nitrate free. I don't know about organic though.
Another place I have purchased bacon - not recently though - was from Hutterites. Definitely organic and nitrate free! It was very tasty. I get all my chickens from them as well....they are free range and you can sure taste the difference.Laurie

No kidding. I live out in the sticks of texas and I am lucky if I can make it to a walmart, so I rely online for everyting that is "specialty" Although nitrate free really should be the norm.

That's a good question, Jonniboy. I don't recall anyone saying nitrates caused them to stall - anyone?? I remember years ago when I was doing Atkins (and I do mean YEARS ago LOL!) the big concern in bacon was the sugar. It was told that Dr. Atkins said not to worry about the sugar, it would "cook out" of the bacon. There never seemed to be any discussion about nitrates back then. Now, however, we know nitrates are not the best thing to put in your body. But I don't know if you have bacon once in awhile if the nitrates could be a problem for most people.

About the bacon - I am fortunate to have a huge Whole Foods Market in town (love that place!), and this is what I found: It was impossible to find a bacon that was both nitrite/nitrate-free and sugar-free. Every single brand that was nitrite/nitrate-free had some sort of sugar in it... usually listed as evaporated cane juice or turbonado (spelling?) sugar. It's almost like it has to have one (nitrates) or the other (sugar), and we have to make a choice. I try not to eat a lot of bacon, but when I do, I have been choosing sugar-free over nitrite/nitrate-free. Mostly because it's cheaper and much easier to find. If I ate bacon more often, maybe I would be more concerned over the nitrates, but since I don't, I'm avoiding the sugar part.

It is mentioned in the new revolution book a few times to eat nitrite free.
Nitrites are nasty. I know there are smaller organic farms that don't use the carcinogenic preservatives but to buy them straight from the health food store,....sheeesh, I would go broke in a week!
Maybe someone has the scoops on a reliable deal on-line???

I agree with your assessment, MatziMarie. I cannot find bacon free of nitrates, but I can find sugar free bacon. I don't eat much bacon, and I don't eat lunch meat or anything else containing nitrates, so I'm not too concerned about my consumption of them. But SUGAR!! Oh, put the Atkins' dagger through it's little cube heart!

Folks, you're confusing nitrates with nitrites. Dr. A. said to avoid sodium nitrite as it's a known (or strongly suspected) carcinogen. Sodium nitrate is not.
Hope that helps everyone's search.
(I've found nitrate+nitrite-free bacon at virtually every supermarket I've looked at - Giant, Stop and Shop, Shaw's and Whole Foods).

Just checked the book and Dr. A does say nitrATES (p. 124) which I missed. Sorry about that. That being said, my research has shows that nitrITES are the carcinogenic concern, not nitrates, but YRMV (Your Research May Vary). Sorry for my misleading info above the asterisks.....Looks like I was the one confused...not the first time!

Some recent research has questioned whether nitrite and nitrate do cause cancer. Now obviously nitrate and nitrite as such does not cause cancer (there is loads of nitrates in vegetables) but in meat they have been thought to form nitrosamines which has been linked to cancer. I guess we'll just have to hang in there and see what future research can reveal.
