  • Diet - what diet?

    Tee - hee, I just had to share my menu for today...

    Late Breakfast (day off work, so had a bit more time than usual, to enjoy...) 3 egg omelette with crumbled feta cheese, avocado and smoked salmon pieces, tomatoes.(Induction legal)

    Main meal (probably mid - afternoon as DH is working tonight) Pork loin stir fried with veggies, lemon juice, chillis, herbs and spices. a dollop of cream mixed in just before serving (Induction legal)

    Smaller Meal - Home-made Mushroon and nut pate on flax crackers. (OWL rung 3) Veggie 'canapes' - celery, peppers, olives, cherry toms, with a smidgeon of cream cheese and/or some cold meat and/or crumbled bacon on them, mayo.

    Snacks if I need 'em - Greek Yoghurt with splenda and a few crumbled pecans, devilled eggs, cold meat, more veggie canapes.

    If I get a chance later I'll post the Mushroom pate recipe. I haven't made it since being on Atkins, so I'll have to work out my amounts for the different ingredients when I make it. I did make an induction version a few weeks ago with cream cheese instead of the nuts - not as good, but still OK, so I'll post them both when I get a mo.

    Honestly, I mean, DIET? WHAT DIET?

      Don't you feel so deprived? I feel so sorry for us. I think I'll go drown my sorrows in a grilled steak and some more of that Pink Lemonade Cheesecake I made last night.

        huh - i'm not sure what sounds better, the steak or the cheesecake...I think I'll go for that STEAK!!!

          Pink Lemonade cheesecake??? Yummo! Please where do I find the recipe for it?

            I'm writing a low carb cookbook--I made it up. It really hit the spot when the weather hit 93 degrees the last few days. It's basically made the way you make homemade Jell-O (Jelly in the UK) with 2 packs Knox gelatin and two packs of unsweetened (no sweetener at all) pink lemonade flavor Kool-Aid drink mix and 3 cups water, total, and 12 oz. softened cream cheese, 1 cup Splenda or equivalent of liquid Splenda (that's what I use, so no carbs). Make up the gelatin mixture and hold back about 1 cup at room temp. Mix the rest in with the cream cheese and whisk until well blended. Pour into a 10-inch pie dish and refrigerate until firm on top. Then pour the rest of the gelatin mixture over the top and refrigerate for several hours. The cream cheese layer is light pastel pink and the gelatin on the top is a much deeper pink--very pretty.

            This is induction friendly. Don't forget: this is a diet; so when you make it it would be unseemly to actually like it so much that you lick the bowl.

              Thank you soooooooooooo much for the wonderful recipe. I loved it! Mmmmm so good. Sunny, I can't wait till your low car cookbook is complete. I will be the first to purchase a copy
