Ideas for camping

  • Ideas for camping

    My husband and I are going camping for Memorial Day in a couple weeks (2 nights). We will have a little grill and a fire pit, but I need some ideas of what would be relatively easy foods to bring and prepare there. This is what I thought of so far:

    - hard boiled eggs
    - chicken salad
    - turkey breast in lettuce
    - hot dogs (nitrite free)
    - hamburgers
    - tuna
    - veggies

    What else can you think of? I am in OWL rung 1. Thanks.

    I will be doing the same thing so i am on the lookout as well

    I would find things that dont need to be refrigerated, like make yourself a low carb trail mix. I find a mix with low carbs, then add more nuts and seeds. I also make sweet clusters out of flax seed.
    Just whip some egg whites until the form peaks, then mix in flax seed and some splenda, then bake for 10 mintues or so... tada! sweet clusters in your mix. or:
    COCONUT CRUNCH
    1/4 cup butter, 4 tablespoons
    1/4 cup granular Splenda or equivalent liquid Splenda
    1/2 cup almond flour, 2 ounces
    1 batch Angel Coconut
    1/2 cup sliced almonds, 2 ounces
    1 tablespoons sugar free instant vanilla pudding mix *
    1 cup heavy cream
    1/4 cup granular Splenda or equivalent liquid Splenda
    1/2 teaspoon vanilla or coconut extract

    Spray an 8x8" baking dish with cooking spray. Put butter in pan and microwave until melted. Add next 4 ingredients and mix well with a fork. Spread evenly over bottom of pan and bake at 325ยบ about 20-25, stirring every 5 minutes, until golden brown. Watch closely during last 10 minutes so that it doesn't get too dark or burn. Remove from oven and remove half the crumb mixture from the pan and set aside. Press remaining crumbs evenly over bottom of pan; cool then freeze about 30 minutes or until set.

    Meanwhile, place pudding mix in a mixing bowl. Gradually whisk in the cream until the pudding mix no longer looks grainy; add 1/4 cup Splenda and vanilla. Beat on high with electric mixer until filling is thick and fluffy. Be careful not to over beat it or you could end up with butter.

    Drop cream mixture by big spoonfuls over the "crust", then spread gently to cover crust trying not to disturb the crumbs. Sprinkle the remaining crumb mixture over the cream filling. Cover and chill several hours before serving.

    Makes 9 small servings (this is not my recipe, i changed it a bit, i am not sure where it orriginated).

    Find or make a low carb jerky, yummmm.

    You can throw in some atkins bars- i beleive they make a smore flavor which i think would be very appropriate

      The original poster wrote that she is in OWL Rung 1. No nuts and seeds are allowed before OWL Rung 3.

      You can throw in some atkins bars- i beleive they make a smore flavor which i think would be very appropriate
      Only if you want to cheat and risk messing up your weight loss results. Atkins bars contain ingredients not allowed during OWL Rung 1 (e.g. tapioca starch), plus they are known stallers for many people.

        I mention that because the rung were not in my 1992 or 1972 ..... but it was in my 2002 edition. And there are a few sites online giving detailed info about the rungs, most is the worry of adding the wrong things which cause you to slip back into you naughty ways..
        When possible, Dr Atkins gave his patients the choice of what to add next. Add nuts from the list if you miss crunch, or because they are convenient to carry without concern for refrigeration. Some people want to broaden their cheese choices by adding fresh cheeses. This can be helpful for those who are looking for an alternative to eggs for breakfast. Want more salad or veggies? Increase your intake by 5 grams from the allowable list. But try to follow his ladder.

        Just like i may 'treat' myself to something, but not have it every day, and he also suggests that with a very large activity increase your body may not notice unless you add something a few times, but that was taken from notes specifically for muscle gaining weight training, but when i camp i hike all day (around 9 hours).

              Thanks for your ideas Remykins. Though I appreciate you taking the time to post some ideas, I'm not eating artificial sweeteners or Atkins bars. Only unprocessed natural stuff. Thank you though. I do appreciate it.

                    Hiya

                    We love BBQ'ing, and if you take some kebab sticks, corgettes, onions, tomatos, peppers and some type of meat that you can stick on with them and bbq them.. (or anything else you prefer that you are allowed) but making your own stick is fab.
                    You can make them there, easy peasy.. and deeeeeeeelious
