  • Grocery shopping today

    I did my weekly grocery shopping today and here is what I got. My local FoodLand has this deal where you get 5 packages of meat for $19.95. Some times it's all or mostly ground beef, other times it's all corned beef and hotdogs, other times it's all Buzz Buttered Steaks. You pretty much have to take what they put out. There are times I move on to the other meat case because it's full of nothing but processed stuff. This time I got 2 packages of ground beef, each was about 2.5 lbs. and three packages of these luscious looking pork chops. At our local farmers market I got english cucumbers, big, ripe, juicy tomatoes, a couple giant purple onions, and some some mushrooms. The place where I got those lovely purple onions is actually called The Purple Onion...heh heh heh. I also found some nice looking half runner green beans too. I went on to the meat market which is inside the same farmers market and got two big juicy pork chops for this evenings dinner. So for dinner I'm cooking green beans with bacon and garlic, porkchops with sauteed mushrooms and onions, and a lovely salad with some of the spinich I picked up at Kroger today. I live in WV and all the old timer's here used to cook green beans with a nice big piece of bacon or fat pork of some kind in them. Yummmmy....takes me back to family reunions and church homecomings when I was a kid.
    So, I just wanted to share all this with my fellow low carbers..... Thanks for all your support, it means a lot.

    I live in East Virginia, can I come to dinner?

    I must be an old timer, 'cause I have always and still cook my green beans to death with bacon, country ham or salt pork/side meat. I now like most of my veggies to be cooked just enough to still be firm and a little crunchy, but not my green beans.
    People who say it can't be done, should not interrupt those doing it.

      I guess it's a country thing to cook green beans that way. I love them cooked still a little crunchy but I also love them cooked with bacon and like you said, cooked to death.

        So how do you cook it? Just throw it in a pan or do u brown the bacon first? I wanna try it. sounds yummmy and i need a new veggie, thanks.

          If I use bacon, I fry it until it's crispy and remove the bacon to a plate. Cook the green beans in water and the bacon grease. Right before serving, crumble the crisp bacon and stir in. I don't like soggy bacon.

          If I am seasoning with ham, I just cut up chunks and/or use a meaty ham bone.

            This time I cooked the bacon first then just put the beans in there with a little water and salt. Cook them until they are tender then allow the water to cook off of them and the beans to stick to the bottom of the ban just a little. Makes them taste so much better if there isn't bunch of liquid in the bottom of the pan.

              I agree 100%. I always cook mine down until there is little liquid in the bottom. Just enough to warm up leftovers. I ususally make a huge pot, so I have lots left over.

                And I often throw some chopped onion in mine too. Mmmmm.

                  I've always put the bacon in uncooked and let it cook as the beans do -- but I add a tsp of bacon grease (one of my favorite food groups) so there is some flavor to the beans. I cook them on top of the stove until they are just past crunchy...I buy a 5 lb sack of frozen green beans at Sam's Club and can go through that bag in just over a month. I also buy the large bag of broccoli and we have that quite often also!!!

                    One of my other favorite ways to have green beans is to chop some onions, and mushrooms, melt some butter in the pan where I'm cooking them and then put the onions and mushrooms in and let them cook till almost tender and then add some frozen green beans and cook until everything is tender as you like it. I also add a little sea salt and pepper. Yum! My husband loves them this way.

                      I was raised on slow-cooked green beans (Mississippi). My grandmother always slow-cooked them in a big, cast iron pot with cured, bone-in ham and vinegar. If only I had eaten the beans and meat and left off the cornbread and peach cobbler all those years!
