  • SPINACH LASAGNA - Can't remember where I read it...

    I read yesterday a thread where someone posted this recipe, it sounds SO good! We haven't had any cheese today, or carbs of any kind, because we would like to have this for dinner... is it Induction friendly??? I think it is, but just want to check!

    We plan to use a can of crushed tomato instead of the sauce, but if we can't find a sugar/carb free can of tomato sauce, we will use a fresh tomato. Oh, and no onion, eww! We are really looking forward to it, hoping its acceptable!!! I assume the carbs are from the cheese and tomato???

    SPINACH LASAGNA
    1 pound ground beef
    2 tablespoons onion, chopped
    1/8 teaspoon garlic powder
    1/2 cup spaghetti sauce
    8 ounces cream cheese
    1 egg
    1/8 teaspoon pepper
    10 ounces frozen chopped spinach, thawed & drained
    4 ounces mozzarella cheese, shredded
    2 tablespoons parmesan cheese (I used the kind in a can)

    Brown the hamburger with the onion; drain off the fat. Mix in the garlic powder and spaghetti sauce; season to taste and heat until bubbly. Meanwhile, soften the cream cheese in a medium-size microwaveable bowl for about 40-60 seconds. Stir until creamy; beat in the egg and pepper with a spoon until well mixed. Blend in the spinach. Spread half of the meat mixture evenly in the bottom of a greased, 8 x 8" glass baking pan. Spread the spinach mixture over the meat; top with the mozzarella, then the rest of the meat. It may not completely cover the top, but that's ok. Sprinkle with the parmesan cheese. Bake at 350ยบ about 30 minutes until hot and bubbly. Or, cover with plastic wrap and vent one corner then microwave on HIGH for 3 minutes; then reduce to MEDIUM and cook for another 7-10 minutes until hot and bubbly. Let stand 3 minutes before serving.

    Makes 6-9 servings

    Can be frozen

      Thanks, I have copied a lot of her recipes, they all look sooo yummy!!! This is our first to try, hopefully we like it... because we have a long way to go. lol

        I love, love, love that stuff! I can't get enough. Too bad it takes so long to make (for me). The hardest part about all of this is the cooking. I do not like to cook and my food doesn't usually taste as good as when dh does it.

        Major Goal - 128 lbs/ healthy range

          Wow, you all have us really excited about this recipe! What else are really good ones?!!! What should we try next?

            Do you like Mexican? Linda has a good green chicken enchilada casserole on her site. Yummy. Let me know if you can't find it, its under chicken, in the casserole section. I am pretty sure its induction friendly, my whole family loves it.

              I LOVE, LOVE, LOVE Mexican food! Mexican & Italian foods are my FAVS!

                one of my favorite side dishes is fried radishes & onions....it's like red skinned potatoes --- I made corned beef hash with them one night when my family was having the "original" version -- I didn't feel like I was missing a thing...they are delicious!

                I also like the stuffed green peppers - I make up a few at a time and freeze them -- they are lifesavers when I don't want to cook.

                  Hubby is cooking it right now, OMG it smells soooooooo good! I am sitting here drooling! Can we eat this with a cup of salad too??

                    The cup of salad depends on where you are for the carb limit for the day...if you have the carbs for it, then go right ahead.

                    I gotta try this recipe!

                    Successfully did Atkins in 1998 using 1992 copy of the book...before it was "hip". Lost 60lbs, exercised daily, felt and looked great. And then I moved in with a junk-food loving man, my mom got sick and passed away, then I suffered a spinal cord injury, and junk-food dude left me...and now I weigh 292lbs. That's 22lbs MORE than I weighed the first time around. It's 10 years later...I know this will work for me again.

                      We opted out of the salad tonight, but will get some tomorrow.

                      So, we are now eating the lasagana.... all I can say is, OMG ITS AMAZING!!!! Its the full & rich flavor I've been NEEDING since we started this! I am impressed!!!
