in the ham and cheese recipe, it says to put diced ham in. does that mean packet ham? confused?

Diced ham can either be thick cut ham which you can dice, or walmart has already chopped ham in a package in small or large chunks. It doesn't mean lunch meat, but i guess you could if you wanted to, I have! As for heavy cream, I use heavy whipping cream, don't know if it's the same thing, but that's always worked for me! It's next to the milk at the grocery.CW 137
