I made these using pork rinds and to me, all I could taste was pork rinds. Not that great, really. I think because mozzarella is such a mild cheese, you just lose the flavor with the pork rinds...BUT...

I have been meaning to try them using ground almonds/hazelnuts as a breading instead of pork rinds. I think this combination might be unbelievabley good! At least I hope so. It is a WONDERFUL breading for catfish. Haven't tried it yet with cheese, but plan to. Of course, you need to be on the nut rung to use this breading.

I would think a nut crust would be great.

Or you could try parmesean cheese for the breading- I like it a lot on other stuff.

i made them once by taking some polyo string cheese sticks and cutting them in half, dipping them in egg, then in a mixture of soy flour, parmesan cheese, and seasoned salt before deep frying them. they were pretty good except next time i would use less soy flour because it has somewhat of a wierd taste to me...
